Your Favorite Chiles

What are your favorite chiles?

While I love the heat of habanero (aka Scotch bonnet), I don't care for the flavor of it very much, unless it's mixed with something like jalapeno, cayenne or banana peppers.

Preffered method of Preservation

I want to hear how others preserve their peppers through the long, depressing winter seasons where fresh peppers aren't readily available. I personally just slice them up and put them in a jar of olive juice (not olive oil) with a few cloves of fresh garlic. The olive juice I get from a local restaurant for free (Courtesy of Backyard Grill & Bar). Preserves the consistance well, doesnt alter the flavor of the pepper and it keeps for a very long time if refrigerated.

Are Chilies bad for you?

I ask my doctor once if chilies are bad for you, and she said, they are not bad at all, but rather good for your digestive system. She mentioned that they help kill unwanted bacteria and also help with digestion. She also did mention the pain associated with..you know.
But someone told be once that chilies can give you stomach cancer if you eat to much.
Can anyone give me some medical insights? Or have any personal experiences?
PS: I eat a lot of chilies, regularly. Please, don't email back and say anything in moderation is good and too much of something is bad.. I've heard that rhetorical answer my whole life.
