Supposedly both parsley and beet stems and leaves contain a lot of oxalic acid, which I think inhibits the absorbtion of some good vitamens and minerals. But I would find out the latest research or threads about this to find out more. Also, see how it affects you. I feel free to use these, but kind of sparingly and not on a daily basis...just in case... -

Tue, March 18, 2008 - 7:07 AMmaybe they do not want people to go "tooo green" with parsley etc.. because if ones PH gets too alkaline one could lose valuable minerals and potassium.. just my thoughts.
