i want to eat more seaweed, so i bought some nori sheets. what are some interesting ways to use them? for sushi i always make rice and avocado. any other ideas?

enoki mushrooms (very good with shiso leaves),
cooked shiitake mushrooms,
nato (fermented soy bean it is a bit of an acquired taste),
tofu,
cucumber,
umeboshi plums (goes very well with cucumbers),
carrots, spinach, sprouts,
tofu pouches simmered in mirin/soy sauce,
cooked egg (not vegan obviously)
I am sure I am forgetting some....
For non-traditional I am sure you'll get more ideas here....

sesame-peanut: mix peanut butter + sesame oil in a bowl, lightly dress steamed spinach, roll and sprinkle with sesame seeds
peanut butter and jelly: sounds gross but is not bad
cucumber and tomato: very light and refreshing
green goddess: a drizzle of green goddess dressing with steamed asparagus, spinach, cilantro and mint
jerk portobello: brush a portobello with olive oil and sprinkle with jerk seasoning. sautee 3-4 minutes per side, cut into strips and roll
sweet potato and plum: bake a sweet potato and roll with plum sauce
NOT vegan:
goat cheese, corn and basil: line crumbled goat cheese, cooked corn and minced basil on the rice and roll

It contains sticky rice, cucumber, carrot, tofu, and almond butter. The almond butter makes it irresistable :) yummy -

one of my favorite super yum sushi freek treats is
apple cut up in very small strips
pickled ginger
tahini/ or peanutbutter
raisins
rolled up with or without brown rice in a toasted nori sheet
whats not to love...........................
i call it a sushido because on the day that this bizzaro creation was formed we left the rolls whole so they resembled a green burrito. but tasted oh so yummmmmm
sweet spicy creamy fresh crisp golly i think i need to make some..
also if you wanna get more sea veg in your every day diet , get some dulse you can sprinkle it on almost every thing ....especially good on salads
and if your in a sushi theme youll love this salad
-the salad fixins-
finely shredded red cabage
raisins
cucumbers
sprouts
crumbled dulse
pickled ginger (be sure that the pickled ginger doesnt contain aspertame)
-the dressing yumness-
in a blender buzz on high until smooth and creamy you may need to add a little water.
carrots
wasabi
tamari/ soy sause
tahini
eat as a salad or if you wanna be fancy make wraps in tender collard greens...
seriously if you love sushi the wasabi way you love this salad -

I prepare a nice salad of my choice with my favorite dressing.
Lay out the nori, fill it with salad and pour the dressing on.
Roll it up (I usually wet the end slightly like I am rolling a spliff).
Depending on how tight you roll it, you can cut it or not.
Offer it to the Supreme Lord.
Enjoy the blessings.

trader joe's now sells some nice SD tomatoes in their refrigerated section...no salt or oil added...just yummy tomato goodness...

For raw sushi, paste made from brazil nuts (soaked) and carrots, (mashed), with veggies, sprouts, scallions and avocados.
Also for raw sushi, jicama in the dehydydrator (after a couple of seconds in the food processor to cut it up small) works great for rice substitute.

How about riceless sushi? I spread avocado on the nori, and roll whatever I want into it, like cucumber, carrot, green onion, and zucchini.
Another yummy, is tempura yam rolls.....or even raw they are tasty.
Clover sprouts are a great addition too. I make up several kinds of rolls, leave uncut, wrap in foil, place in tupperware and put in cooler for camping food!!! My friends are always amazed at the gourmet items that hide in my cooler at festivals! And my daughter eats them like a burrito....yum yum yum.....
I have made salads with a light dressing, and wrapped in nori to eat too....saves on doing dishes....

Wed, April 23, 2008 - 7:56 AMWow, there are some great ideas here! I LOVE LOVE LOVE making sushi, especially in the summertime because it requires very little cooking. I especially like carrots cut into matchsticks and strips of fried tofu. To make spicy rolls I use the Sriracha hot sauce:

Fri, April 25, 2008 - 1:10 PMfor all the sushi ideas everyone....Last night I made my very own sushi rice for the first time! and it turned out great!
Now that I have all the "basics" at home (sushi rice - rice vinegar - wasabi- ginger -nori) all i need are the fillings! yum!
I made avocado w/sliced carrots very thin, green onion and a little hirachi and topped with gomashio/sesame seeds. YUM!!!!!!!!!!

And, if you peel it and remove the seeds, you can make some really interesting nigiri out of it. The slightly acidic nature of tomato is amazing with soysauce, and for the soy-intolerant/allergeic; try this solution. The juice/water from pickled ginger.
You can ask for it at a sushi place. The non-pink is best.
