unless they're shredded or sliced really thin. Don't get me wrong, I love carrots otherwise, it's just that carrots are so woody that they mess up the texture of the rest of the salad. I'm having a salad with onions, bell peppers, tomatoes, olives, cucumbers, there's some pretty crunchy things in there already, but the carrots just mess up the chewing rythym because they require twice as much chewing effort just to get thru 'em!

Tue, April 1, 2008 - 12:42 AMI agree. In fact, I just eat spinach as the main part of my salad, so there's enough Vit. A in there to make adding carrots redundant. I don't even buy them anymore.
Still, my *least* favorite carrots are the bright-orange cooked ones that taste strangely like Play-Doh smells. My mom makes them when I go home to visit, and I always think, "WTF is wrong with the taste buds of the people who like these things?" (LOL How egocentric am I?) -

but cooked right i dont mind them. when we cook them its never boiled. always sautéed in a chonk (spice tempered oil).
spinach wins over the carrots tho.

Tue, April 1, 2008 - 11:52 AMWhile you are at it, can you request that mainstream places offer at least one vegetarian salad....please? one of my pet peeves when traveling and having to eat at airports and other mainstream places. Look for a salad, yes of course! many salads are offered, ALL OF THEM HAVE SOME FORM OF MEAT. If you want meatless then you get the little tiny iceberg and tomatoes 'side salad'. Well maybe you can buy 2 of those, but all the nice fancy ingredients go instead in the salads with chicken. It makes me so furious! OK, sorry guys, I just had to vent. I love making my own salad (out of the garden, yeaa!) but sometimes work makes me travel...shudder.....
OK, vented enough. By the way, I agree with no chunks (thin slices or grated) of carrots, but if you grow your own carrots you learn an appreciation for them. Heck, it takes so long to watch them grow that you better (just kidding). Seriously, home grown carrots, YUMMY YUMMY YUMMY.... -

This whole chicken and bacon in salad bit is ridiculous!
not even from a vegetarian standpoint but just from a culinary standpoint...I don't put tofu and tempeh in my salads! so WTF is up with the meat in salads bit??? and I remember that even as a meat-eater when all these meat salads came out, I went like "WTF? it's a salad!"
and now as a vegan, usually you're thinking at least the salad is safe..but no such luck. }-(
as for the carrot issue, for me the whole point of salad is for it to have different textures and flavours..so My favourite salad are those that have different mixes of veggies in nice big chunks for example: has mixed greens, sprouts, sweet peppers, green onions, radishes, carrots, celery, walnuts, raisins, cucumber, and even pickles and sauerkraut...in a nice garlic lemon sauce! YUM!
and yes it's fun to eat and there's a lot of chewing and it takes like an hour to eat a big bowl...but that to me is the whole point of being a herbivore! :-)

Tue, April 1, 2008 - 6:08 PMI also have to throw in that you also need to read the labels! Some commercial salad dressings contain GELATIN! Not kosher but pig flesh. When I travel, I usually opt for fresh fruit or just coffee. It is a bit harsh for vegetarians and damn near impossible for vegans. Of course, it depends on where you are traveling to. I think I should start a new thread...

Antoine, tofu and tempeh can fit very nicely in some salads!
I came up with a tofu-blood orange salad. It only works with fresh out of the mold, tofu and uses fresh silken tofu, blood oranges, kaiware (daikon sprouts), watercress and a blood orange, olive oil, champagne vinegar dressing.
I have used spiced baked tofus and various kinds of tempeh in a number of different salads

I put tofu in my salad the other night. Balsamic vinegar + Tofu = Yuck!
No other ingredients could have saved that salad, except for maybe a taste bud anesthetic. I will never do that again.

Fri, April 4, 2008 - 8:07 AMA place that would regularly put carrots in its salads is a place that's not willing to spend money, would be my guess. They're probably having the cheapest carrots they can find delivered instead of using a farmer or a purveyor that buys from a group of farmers. That having been said, carrots can be great in a salad, even thickly sliced or matchsticked, if they're blanched in heavily kosher salted water for about 20-30 seconds and shocked in an ice water bath. Carrots get a deservedly bad rap not because carrots are hideous but because the kinds most readily available are hideous. Think about how much easier it is to buy a crappy tomato than it is to buy a good one.
You live in Redwood City, Ted, so maybe this Sunday you could check out the Menlo Park farmer's market that's a block east of Draeger's. I'm getting really good carrots from a stall there. It's the first stall on the left if you're walking east (Draeger's parking lot would be behind you).
I have to agree with Philip about tofu in a salad. During the summers I like to make a salad of roasted tofu, roasted tomatoes, roasted mushrooms, wilted greens (often only spinach), and rosemary that I like a lot. In the winter I like using squash instead of tomatoes. Culinarily, meat in a salad--if you're an omnivore--makes very much sense.

Fri, April 4, 2008 - 11:58 AMI mostly agree with the tofu-in-salad thing, but I must say I make a brown rice salad with baked tofu, fresh corn-off-the-cob, edamame, green onions and grape tomatoes that I dress with balsamic vinegar, Dijon mustard and oil that is amazing. And I love shredded carrots in green salads! I like as much different texture as possible.
