in heavy-bottom saucepan,
mix 1/2 cup ghee
with 3/4 cup besan
cook on medium heat for about 6-10 minutes, stirring constantly, until it pulls away from the sides
add cardamom powder, a teaspoon or two, and about 1/2 cup to 3/4 cup powdered sugar.
Let cool, form into balls, roll in powdered sugar, and refrigerate.
It's Hanuman's favorite. And my granddaughter's too.
You can also use it to make hummus. -

grate vegetables (cauliflower, cabbage,carrot) and mix in besan to bind, mix in spices and ginger and chili and cilantro and drop spoonfuls into hot oil and u have koftas!
remember tho folks, besan is not the chickpea even tho we call it chickpea flour. it is its cousin chana dal, which is a lentil.
are u sure u can make hummus with it cynthia? im curious, since it isnt chickpeas, tell me

Tue, April 22, 2008 - 6:51 AMYah sure, try it: just moisten the besan to a paste with water, add tahini, lots of lemon juice, olive oil, salt, and (if you want) crushed garlic (maybe hing instead?). Tastes just the same! -

and yummmmmm. kadhi is sooooo good. the gujurati ladies in the temple make it soooooo good. they have a version that has tiny cubed potatoes and a nice spicy and sweet sauce.
now im jonesing for some kadhi!!!!

Besan chila - easy and quick!
Soak 1 cup besan, add a bit of salt (to taste) and 1 tsp turmeric and some red chilli powder if you like. You can also add some jeera (cumin powder). Make a thick paste of this mix, heat a bit of oil or ghee in a pan, ladle the mix onto the pan to make a "pancake". Add chopped onions, tomatos, green chillies on top. Flip the pancake over until both sides are cooked. Gobble up with tamarind chutney and garnish with chopped cilantro if you like. -
