<div>...that with every event that we have the opportunity to present, it always begins with an intention. For Alma Paradiso '08, the intention shifted somewhat from what we had originally imagined for the event, 3 years ago. It wasn't a shift in the desire to have a beach party with our friends and family on some remote beach where everyone had the ability to create paradise as they saw fit. It wasn't a shift in the commitment to having amazing performances, music, and atmosphere. It was simply a shift in the location. It was an amazing journey. As organizers across the board to every participant and even to the people that live and work on the island, our trip to Catalina was an experience unlike any other. It was everyone's first time with this event, and we want to sincerely thank everyone that made this journey with us. It is a testament to your faith in us that you would go on this adventure with us, and we are truly humbled. <br/> <br/>As all of our friend and family neared the island, a boat ran alongside ours Captian'd by Big Cheese and Squeeze displaying a Welcome to Alma Paradiso banner ( and something about pirates...). That really seemed to set the stage for the event. Beautiful water, gorgeous location, AMAZING food, bangin beats, and YOU. We were very proud of this event and of all of you for making the experience beautiful, from start to finish. Thank you SO much for trusting us. Thank you SO much for bringing all of your laughter and color to our paradise. Thank you SO much for all of your smiling faces that remind us with every person why we do what we do. YOU are amazing. <br/> <br/>As you can imagine, there are some folks without whom these events would never go from the insanity in our heads to actuality. As always, our brothers, Turo and Flash are absolute troopers. Nothing at these events gets built without one or both of them busting ass to see it done. These are our guys, and they are as much responsible for this event happening as we are. Similarly, Auriel took on a HUGE responsibility in coordinating all of the tickets, placements, and getting people where they needed to be. We would have been weeping in the fetal position in the corner, shaking, muttering something about vegan meals were it not for this beautiful angel. Fluid Sound has been our wingmen for almost every event we've done and they have never had anything short of brilliance when it came to the beats that rocked your booty. Specifically, Kiwi. That guy busted ass to make sure that we had sound when we needed it. If you see him, you owe him a leg humping. Also, our hats are off to the Rangers of Two Harbors Campground and all of the locals that went out of their way to help us make this event happen. There was a ton of behind the scenes happening, but with their help, everything worked out beautifully. Last, but certainly not least.... the crew of the Phat Elvis Chicken Shack. Viagra and his band of fearless culinary wizards kept our bellies full with some of the most delicious yummyness that we've ever sampled at any event. The entire crew worked tirelessly the entire weekend to feed all of us with a menu of awesomeness that surpassed even the diversity of our musical lineup. These guys are all owed our most sincere gratitude... and yours too! Pack a suitcase/bag for clothes and stash the sleeping bag and tent in a bin. Remember... this is PER PERSON, so if you are traveling in a group.... talk to them. Figure out the best way to make use of the space you have. Alma has never been about bringing out everything and the kitchen sink. It's about packing light, food is there for you, and for little bits and pieces that you can't cram into your bag, there is a general store. <br/> <br/>In the process of getting you and your stuff on a boat and to the space, you will thank us for making you pack light. <br/> <br/>I don't think they will be standing at the docks removing your jewelry, just put your gaudier bits ( gold bling, jesus piece, chromed out cadillac symbol ) in your bag. Four wheeled dollies and four wheeled wagons are not permitted. <br/> <br/>Electrical &amp; Musical Equipment <br/>Electronic, computer, audio/visual or related items or equipment can be carried at passenger’s own risk on a space available basis and must meet baggage allowances and will be stored in baggage compartment or crew designated areas. <br/> <br/>Musical instruments and band related equipment can be carried at passenger’s own risk and must meet baggage allowances and must be stored in baggage compartment or crew designated areas. <br/> <br/>Animals <br/>Personal domestic pets are to be leashed and muzzled or in a pet carrying case while waiting to board the boat and for the duration of the trip. One pet per passenger. Pets are to stay close to the owner on the deck. Pets are not allowed in passenger seats or in the aisles where they may obstruct traffic. Pets must be secure in a muzzle, leash and collar or a muzzle and harness sufficiently strong and tight fitting to securely hold the pet, or the pet must be enclosed in a suitable animal carrier throughout the duration of the trip. We couldn't do a Luau, or what I affectionately refer to as a "Pacific Rim Job" without it... <br/> <br/>So I Googled a few lackluster vegan recipes which didn't even come close to the genuine article, and on hit number eight of the first ten I found the very item on the Alma Paradiso menu. Something told me that I was, like William Clark, exploring new territory. I guess that there just aren't very many Filipino vegan dishes known on this side of the Pacific... <br/> <br/>I used tofu for the protein, and dried seaweed (99 Ranch, yo!) to get the flavor of the sea (I hope this is kosher for vegans, as the gathering of seaweed evicts thousands of tiny fishes, crustaceans and mollusks from their happy homes - yeah I know I just ruined it for you). Anyhoo, the noodles came out a little too al dente, and I accidentally dumped in two tablespoons of sesame oil when I only intended a teaspoon, but OHMYF*((*&amp;INGGOD! The shrimp can just stay in the "ocian"... <br/> <br/>So here's the recipe to serve two very hungry vegans or four as a heaping noodle side dish: <br/> <br/>one half pound firm tofu, julienned <br/>two strands of dried wakame seaweed, rehydrated (don't toss out the water) <br/>four tablespoons kosher or sea salt <br/>four tablespoons canola oil <br/>Two large cloves of garlic, minced <br/>one half teaspoon minced fresh ginger <br/>One large carrot, peeled and sliced <br/>two ribs celery, finely sliced <br/>one quarter cup chopped red onion <br/>two cups shredded or finely sliced cabbage <br/>one quarter red bell pepper, finely sliced <br/>one large scallion, chopped <br/>one eight ounce package dried pancit noodles <br/>one tablespoon soy sauce <br/>two tablespoons sesame oil <br/> <br/>Combine tofu, seaweed, and half of the salt in two cups of water and marinade for one hour. Drain liquid into a three quart pot and press all the excess liquid from the tofu. Remove most of the seaweed, chop it up and add it to the water. Add four cups of water, the remainder of salt, and bring to a boil. When it comes to a boil, add the noodles and boil for only two minutes (instructions say five, ignore them). Then drain the noodles, finally discarding the liquid. <br/> <br/>In the meanwhile, add two tablespoons of oil to your wok, heat to high, and toss in the garlic and ginger, taking care not to burn it, and immediately follow with carrots and celery, toss a couple of times, then add onion and cabbage, toss a couple more times, then add bell pepper and scallions, toss one or two times, and chuck the whole mess in a bowl on the side. Add the remaining oiol to the wok, heat it up again, and brown the tofu and any remaining seaweed for three to five minutes. Add this to the vegetables, combine with the noodles, and toss with soy sauce and sesame oil.
