For my angel's BirFday
Pre heat the oven to 375 F
1.75 cup sifted powdered sugar
1 cup sifted flour - cake flour
1 cup granulated sugar
2 teaspoons of vanilla
12 egg whites
1.5 teaspoons cream of tartar ( for the eggs)
.75 teaspoon salt
Mix the cream of tartar and egg whites
Beat the hell outta 'em till it has good peaks
Add the vanilla
When egg whites are stiff Add the granulated sugar a little itty bit at a time as you beat the eggs till it's all incorporated
Mix the powdered sugar salt and flour and fold into the egg whites adding the dry to the eggs slowly very slowly as you fold
Put in a tube pan ( DO NOT GREASE THE PAN~!!!!!!!!!!!)
After you fold the mix into the pan use a clean spatula and run it to the bottom of the mix vertically and slowly swirl it around the pan in a little orbit - this lets any air pockets out.
Put da ting in da oven and go pet the dog for 30 - 40 minutes.
When it's done it'll be golden brown, not jiggly, and a straw inserted will come out clean.
Topping:
Serve with strawberries and whipped cream
Two quart boxes of small tart strawberries.
Cut and clean 'em.
Take half and reduce half the berries a bit in some sugar and a splash or three of water.
All you want is a berry syrup.
( cheaters can just use a pack of frozen berries for the syrup)
Whip some cream with some powdered sugar and vanilla
Slice with an angel food fork ( yah there really is such a thing)
Serve with straw berries poured over whipped cream on top and add a few black berries on top for a garnish.

sounds like she's at that magical age where a birthday celebration and just about everything is a wonderful adventure!
i don't have any kids but i have some friends with children who are just about to enter first grade. . .and I love that age. -
