A friend of mine, a butcher, refuses to have Turkey on Thanksgiving. He burnt on turkey as a young man, doing the Renissance Faires circuit thru several states. He was the guy who cooked the turkey legs. He once estimated he cooked close to half million turkey legs in over a decade. Now he gets sick at the smell (let alone the sight) of turkey.
So he does ham.
Around here, several of our black neighbors are cooking guinea fowl...which I learned lately was considered slave food in the south, or poor white's food. If you try to order that in New York restraunt you better have an American Express Platinum card.
When I was a kid, I remember my uncle bringing in a hump of venision. I hope I get to eat that one more time before I die.
We may have had goat once or twice when I was very little...but the memory is vague...I still remember the taste though. Very tender too after cooking for 24 hours in a pit.
We never had pork because my mother was deathly allergic to it. I think I had my first ham sandwich in college.
My daughter lives in New Zealand, so turkey is a bit hard to get fresh....so she's having goose I think. Either that or a great big duck...I think they call them swans. (Just joking.)

Mon, November 9, 2009 - 8:38 AMI love turkey. But there's just the two of us now and its very difficult to find a small turkey. Somehow turkey breast doesn't taste the same as when it comes off a whole bird. But I have a feeling we'll be eating nothing but beef for awhile. lol. -

its all meat, depends on your preference and what you can grow or ctch where youre at, if you want close to turkey, try a nice open range chicken, jersey giants are good, so are barred rocks
not quire the same taste but damned good eating
can stuff em and roast them just the same
i have to say tho, i always hear people talk about venison yet most wont eat it if it tastes 'gamey', thats the natural flavor of venison, anything else is just venison cooked to be beef

It's good for you. Plus, wild animals like deer, antelope, caribou, etc. have much less fat than beef and other farm-grown edible animals. -

Thu, November 19, 2009 - 2:08 PMMaybe it's just me but I never minded the "gamey" taste of the deer my uncles and older cousins brought home. My mom did rinse the piece of meat in salt water for awhile...maybe as long as a day sometimes. She used pineapple or papaya sometimes to tenderize the meat for the older members of the family. Mom slow cooked it in the oven...crock pots hadn't been invited then. Other times if the piece was really big, we would dig a pit and cook it wrapped in moist gunny sacks. That meat came out REALLY tender.
In college I hunted smaller animals to extend my meal ticket.
I still miss that old Sear and Roebuck rolling block .22. -

our game hangs in the barn for a week if its cold enuff out, thats when it tastes the best
the backstraps never get that long tho, we always eat them the night of the kill.....lol
tangy is a good word, i just find the meat more flavorful, less bland
i have seen fools that didnt castrate their bucks immediately and call that the gamey taste
that aint gamey, thats ruined -

Fri, November 20, 2009 - 11:11 PMAs I don't hunt now, I miss things like pheasant, quail, chukar, wild geese and duck. Those were the tastes I grew up with out in the central valley of California. In the early days we still had huge salmon runs in the Stanislaus River, so we smoked alot of what we caught. I miss catfish too...but I must admit, the best I ever ate was in Louisiana.
Wild turkeys are now endemic in the state, thank goodness. The mountain lions get a good meal and if you're a good shot you have a bird much like the pilgrims may have dined on...without the hormones of course.
We ate alot of goats in those days also. -

Sat, November 21, 2009 - 8:14 AMI remember about 10 years ago in Concord you could got down to the water canals that go through town and fish for salmon. No longer. It's really sad.
I keep telling my husband to take a pellet gun on his mountain bike rides and get himself some Turkeys (since pellet guns aren't illegal in the parks he rides in). He can ride right up to them.

i strip the bones out usually so i can just enjoy the meat
if you want them less fatty and greasy, steam them before you cook them, most of the fat will drip to the bottom of the pan
i like em grilled over a very low blaze and turned frequently, they cook evenly all the way thru and stay nice n juicy
you can also roast them like i do turkey, put them in a pan and put pan and all in a brown paper sack
cook on a lower heat and let them cook longer, theyll come out nice n even colored and very tender -

Tue, November 24, 2009 - 9:21 PMI like to cook up a big moose steak. Moose meat is very lean (in fact to make moose-burger you have to add some tallow to make it stick together). Duck and goose are good too, but a bit greasy for me. There are a few wild turkeys running about up here, but rather hard to find.
