One of my faves is "Habbitek b'jnoon" by Hossam Ramsey from the CD "Bedouin Tribal Dance". Switches rhythms from beladi to fellahin and you could play all kinds of patterns to the beladi part. My troupe has had fun with this one.
A good one for beladi rhythm is "Beladi unplugged" by helm (CD Itneen) which starts in a SLOW beladi and then goes faster and faster (fun, maybe not for beginners by the end--it's very VERY fast...)
John Compton's Habhi Ru did their famous "cymbal dance" to Omar Faruk Tekbilek's Shashkin--an excellent piece of music.
