In the past I've cooked over an open fire, but we're going to Angel Island next week and we can only use their little charcoal grill thingy. Obviously we can grill things like burgers, veggies, etc but my fav camp stew that simmers all day is out. I'm thinking we can boil some water in the AM for baggie omelets or instant oatmeal, but I'm a little leery of trying pancakes or standard scrambled eggs cuz I'm concerned about the fire staying hot enough long enough to cook everything.... any voices of experience out there? Suggestions for things to try or avoid when doing charcoal only cooking?

Tue, July 8, 2008 - 12:22 PMYou can keep a dutch over hot for a goodly amount of time if you have enough coals hot. Definitely long enough to cook scrambled eggs, and potentially pancakes. Just make sure to shift the oven around often (turn the bottom one way and the lid in the opposite direction) to keep the temperature as even as possible. -

You can feed the fire as needed, it is just charcoal. You can get it pretty hot, with a large pile of the stuff, not just a single layer as if you were grilling steaks on it. You may also be able to cheat and transport a propane unit. Ask about it. I bought a still in decent shape propane grill at the goodwill for 20 bucks, and we use it at Pennsic, instead of fooling with wood fires that have to be watched constantly to do things like simmer things. It stays in the trailer, and gets used for two weeks out of the year, so it will last for years.
