My first pro-sumer DSLR has been my XSi with the cheesy 18 55 kit... only other lens i have is the nifty fifty 50mm f 1.8...
Been taking my photography with increasing seriousness, and starting to get my first paid gigs.. just friends or acquaintances who are performers, models or fashion designers...
Fashion/beauty are what i want my direction to be for most part - but i also would like to be well equipped to do food, product and interiors....
Would upgrading to the 7D be an ABSOLUTE, across the board upgrade from the XSi...or more of a lateral move...?
Will the low-light quality be superior for sure ...?
If the video isn't really a primary concern- what non-video Canon is comparable? I would really almost prefer to buy a separate video camera- but i have seen that the 7D video is GREAT... i am mainly unsure about ergonomically trying to shoot video with what for most of my life i have used for stills (a camera)...

For a budget of 4500.-5000. i wanted to score an upgrade (better sensor) camera, a good tele-zoom(for fashion and general), a wide-angle (for food, interiors), a good carbon (the lightest but strongest, yes?) tripod, a first lighting set-up (have never used one on my own, so was thinking continuous, not flash- like two keys and a highlight) as well as some kind of background system.....
Doable for that range of $?

I think your instincts are perfect, here. While the SLR format *can* produce great vid, the ergonomics of it are... well... not what you'd wish. By a LONG shot.

That's the way I'd do it, most-like.
I'd go for the 70-200/2.8, for sure. In addition to Canon's undoubtedly-fine "L," you might want to consider the recent Sigma and Tamron lenses. The Tamron has world-caliber optics, but the AF is a bit slower than the other two (only really a concern with sports and the like, IMHO). This kind of lens will be much better for fashion/beauty work than the 10x-and-more "superzooms" (e.g. the 18-200 (at 11x) that you mentioned).
However, you should seriously consider the 24-70/2.8 L (the 24 (sometimes 28) - to - 70 (sometimes 75, even 80) range has long been a favorite with the fashion/portrait/beauty crowd. In addition to Canon's, the "main" 3rd-party makers (IMHO, that's Tokina, Tamron, and Sigma) all also offer worthy lenses.

The 18-55 can do CYA-duty 'til you get a "real lens" to replace the wide-angle functionality. IIRC, Canon has a new 10-22 that's pretty sweet; Tokina has a one-of-a-kind beauty in their ultrafast ultrawide 11-16/2.8 (also a newer lens). Tamron has an 11-18, and a10-24; Sigma has a 10-20 and 12-24; but most of those are older lenses; decent, but not really top-of-the-trees, quality-wise.
For food (and other product) shots, though, I'd probably be thinking of a macro.

Ur the first person to make me feel at least semi-ok bout considering tammron or Sigma...
I was thinking to go ahead and bite the bullet for the Canon 70-200 L, and then go 3rd party for others- so that i could buy one or two more...

In comparing.. the 5D Mark ii was out in front- didnt realize it had video.....
Oh well, huh.......?
its really a bit stupid- and i know they're just great cams- but just really can't bring myself to think too much about the 5D- a 5 yr old model.... -

Some people think a butt is sexier in tight jeans if the jeans have the "right" label. While there *ARE* differences in quality, whether you're talking denim or glass, jeans or lenses... the truth is, the images tell the truth. And some of that "3rd party" glass *absolutely* plays in the Big Leagues with the more-expensive OEM stuff.
I've begun to make a point of getting a gander at the lenses on the front of pro's gear. OEM -- whatever brand they shoot -- is the undoubted majority. But I've seen that 3rd-party glass tempts even the pro's away from manufacturer-monogamy. ;-)

Macros: Check out the Tamron 90/2.8 (not only macros, but possibly my all-time favorite portrait lens! But, like all macro's, slow to focus, so not a likely choice for candid shots) or their interesting new 60/2; Sigma's 105/2.8 and newer 70/2.8 are also good bets. That's not to say that the Canon macro's aren't great lenses -- they are! -- just that Canon's aren't the ONLY macro's worth considering for that mount... Oh, yeah, and if you're willing to accept lower-end mechanicals but startlingly-good glass, the Cosina 100 "plastic fantastic" is a real dark-horse win for both bank-account and IQ (that'd be "Image Quality") .
