granted, i could google, or go to foodtv or recipezaar and find all kinds of dressing/stuffing recipes....but what other than the standard bread cube and sage stuffing have you all made that you really liked, and that your dinner guests liked? Even if we don't use them this Thursday....if they're interesting recipes with good reviews, they're keepers for next year (or even for christmas, which for many is another stuff a turkey day).
my mom's family is big on cornbread stuffing:
make cornbread according to the label, but ADD a couple tablespoons of poultry seasoning
bake and cool according to instructions
meantime:
saute onions, celery if you want it, mushrooms if you want them, in butter or oil.
when the bread is done, break it up in a big bowl and add chicken broth to moisten.
stir in the sauteed veggies
taste it to see if you want to adjust sweetness (i use honey for this) or the poultry seasoning.
you'll probably have enough to both bake in a casserole and stuff a little in the bird.
the trick is to not make it too moist so it isn't mushy when it comes out of the bird.
