It's coated, and then aged (for months not years). It's very tasty in small quantities (like chopped into rice congee, or mixed with spinach and salted egg). Looks scarier than it tastes.

Mon, July 16, 2007 - 5:54 PMIt's preserved duck egg, you can find them easily in cartons at Ranch99. You can't have congee without them! That and bits of dried salted pork. Mm yes one of my favorites.
