Corn & Black Bean Lettuce Bundles

I made this tonight. It is SO yummy!

Ingredients:

~1 (19 oz) can black beans, drained & rinsed
~1/2 c corn kernals (it calls for fresh corn but canned corn will work also just remember to drain it)
~1/2 red bell pepper, seeded, chopped
~4 scallions, sliced
~1/4 c chopped fresh cilantro
~2 tblsp fresh lime juice
~2 tsp olive oil
~1 tsp ground cumin
~1 garlic clove, chopped
~1/2 tsp salt
~1 head Boston lettuce, cleaned & separated

Directions:

~ In a medium bowl combine the beans, corn, bell pepper, scallions, cilantor, lime juice, olive oil, cumin, garlic & salt. Refrigerate, covered for at least an hour to allow the flavors to blend.

~Place a lettuce leaf on a work surface and spoon about 1/3 cup of bean mixture down the center. Fold one side of the leaf just to past the center so the filling is covered. Fold the other side of the leaf to overlay the first side. Repeat using all of the bean mixture. Makes 8 bundles.
