Awesome Potato Salad

I made this the other day and OMG so I thought I would share it:

Potato Salad with Green Beans and Tarragon

~4 unpeeled, medium boiling potatoes (about 1 lb), each cut into 8 wedges
~1/2 lb trimmed fresh green beans
~1 tblsp white wine viengar
~1/4 c chopped scallions
~2 tblsp chopped fresh tarragon
~1 tblsp dijon mustard
~1 tblsp extra virgin olive oil
~1 tsp salt
~1/4 tsp freshly ground black pepper

Put potatoes in a 4-5 quart pot and add enough water to cover by 2 inches. Simmer 15 minutes. Add the beans and simmer 7 minutes or until the potatoes and beans are tender. Drain well.

Whisk the rest of the ingredients in a large bowl. Add the potatoes and beans and toss gently to coat.

Yields 4 servings of 3/4 cups each

Cooks notes: Any white or red skinned boiling potato can be used in this recipe. Also, when I made this the other day I didn't have white wine vinegar, so I put 1 tblsp of red wine vinegar instead.

For you calorie counters this has 155 calories per serving and 4 grams of fat.
