this September, and I am generally, well, let's put it mildly and say HORRIBLE at saving money, I decided to invest in a Crockpot. This with the hope of preventing me from spending like 10-15 bucks a day eating fabulous lunches at any of the 8 million excellent restaurants in Santa Barbara. Also, by staying at work and heating up lunches, I get more work done during a day. On Sunday morning, I ritually make a chili that lasts me all week, and it only costs just over $20.00. And oh yeah, it's VERY TASTY!!! It contains:
1.5 pounds lean ground beef
2 16oz cans kidney beans, drained and rinsed
1 16oz can cut corn, drained and rinsed
1 32oz jar of medium salsa
1 8oz can tomato paste
1 16oz can diced tomatoes
1 medium onion chopped
1 cup each: chopped green, yellow and red bell peppers
2 chopped jalapenos (optional for heat, but that's my style)
1/2 tsp majoram
1/2 tsp thyme
1/4 tsp dried oregano
I simmer the ground beef with the onions until it's no longer pink, and then dump it along with everything else above, into the Crockpot. 8 hours later, I have lunch for a week. I save about $30-$40 week on this, and that adds up, bubba!!!
(Sorry for sounding like a Betty Crocker recipe book, but this recipe is a winner!!!)
