currently my favorite new salad is a wonderfully simple one... just a few ingredients and fast
1 tomato - into bite sized pieces
2 or three tablespoons sweet white onion - I like it cut paper thin.. cut it how you like it
2 tablespoons balsamic vinegar
cracked black pepper
Kosher or sea salt to taste...
throw it all in a bowl... and if you want to really pep it up..toss in some olives or unsalted cashew bits... I like to let it sit for 10 minutes or so...to let the vinegar and tomato meld... so tasty.... I've been eating it every day for lunch...and most suppers...often with a fried egg on the side... mmmmm
I'm super spoiled...since my mom has a commercial kitchen and licence so I get fabulous spices for cheap ...usually free actually as she almost always picks up the tab....
so.. I have Hawaiian sea salt.. it's red...pretty.. and good...

my stomach does doesn't like sheep or goat cheese... and I've had to cut waaaaay back on cows... can't eat soy products and nut-cheese gags me...
