Re: Nasi Goreng
Wed, October 19, 2005 - 9:10 AMthank you thank you! I will try this recipe out. Unfortunately for me, nobody on the Indo side family can cook as in the past, they left it all to the "help" to do the cooking (tsk, tsk).
I'll see if I can pull out a recipe for Nasi Kuning to share (festive rice). -

This recipe is from the "Indonesian Dishes & Desserts" cookbook published by Femina.
I will be posting this recipe exactly as written from the book.
"Kue Mangkok" (cupcakes yum!)
Ingredients:
350 g rice flour
water
150 g flour
200 g fermented tapioca (tape singkong)
400 g sugar
200 cc warm water
2 tsp baking soda
250 cc soda water
1 tsp vanilla
food coloring
1/4 coconut, grated
Salt to taste
Directions:
-Add enough water to the rice flour so that its weight increases to 500 g.
-Add the white flour to the rice flour mixture & stir well. Add the fermented tapioca & sugar. Mix well. Add the warm water & work the dough for about 10 minutes.
-Add the baking soda, soda water, & vanilla. Mix until everything is evenly distributed. Finally, add the food coloring & blend till smooth.
-Warm the cup molds for about 5 minutes & fill it till 4/5 full. Put in a steamer with the water already at a rolling boil. Steam for about 20 minutes.

I can't force your Oma to speak, so here's a recipe.
Went back home to Holland the other week and had some awesome food, cooked by some close friends. Came home and my wife had made me Ajam Pedis.
Happy!
