i am wondering if you can make an herbal vinegar out of kombucha vinegar? i accidentally have 2 gallons of some 3-month aged kombucha, and i would like to infuse some with dandelion root. will this work, or will it ferment in a funky way and spoil?

Thu, October 16, 2008 - 2:00 AMI guess it depends upon the ph level. If it's high enough, whatever that is, it should function just as any other vinegar.
I've had really good results using kombucha vinegar in recipes and even window cleaning. Though I haven't yet tried infusing it with anything.

Mon, October 27, 2008 - 1:20 PMI've made tinctures out of this, with good results...I made a ginger root one last week, boy oh boy is it ever potent.
I've also used rooibos chai tea and also some liver cleanse herbs (dandelion included) and it was fine too! I Just let it sit in the sunlight, shaking it daily and making sure the lid isn't too tight.

Sun, March 22, 2009 - 10:58 AMI've infused herbs and spices into Kombucha many times. In fact, I have a bottle of Kombucha Vinagrette salad dressing on my window sill. It simply uses Kombuchua vinegar in place of regular vinegar to make the salad dressing. Use olive oil, garlic, onion, etc. Works like a charm.
