Weird Substitutes

I ran out of milk the other day before I realized it and I was already making mac 'n' cheese (no not the good homemade kind, we had a taste for cheapy stuff ) So I scoured the pantry and the only thing I could come up with was a Soup At Hand creamy broccoli. My original idea was to just use sour cream, but I was feeling experimental.

It came out really good! I was surprised! It was very yummy and while it didn't taste much like broccoli you could really smell it.

What are some weird substitutions that you've used?

Meatless Enchiladas

I think I'm going to give making meatless enchiladas a shot today. Black beans and garbanzo beans with taco seasoning. I don't have enchilada sauce though. It's tomato based, right? Do you think there's any way to maybe mix a little taco seasoning into marinara sauce and have it work? Or maybe I should make cheese enchiladas and use the marinara sauce? I'm really short on ingredients so I'm really using my imagination these days to think of new things to make.

Got a Bread Machine?

Last night I made hot pockets from scratch and I let my bread machine do all the work. They're pretty yummy, if you can get past the fact that I swapped salt and sugar (dunno HOW I did that! I was being so careful!)

I made soft pretzel dough in my machine, flattened it out, filled it with mozzarella and Colby cheeses and some shredded lunch turkey. I folded and pinched them shut and baked them at 375 for 15 minutes.

They were really, really easy. :D I can't wait to explore with them more! OOOH! I have marinara sauce! I'll make cheese pizza pockets!

Do you guys have any creative ideas? If anyone needs it I'll post the dough recipe. I got it out of my bread machine manual. First time I ever used it too!

i love to make quinoa. it is chocked full of nutritious goodness & my 7 month old can have pureed fruit or veggies added, while i can add big chunks of any fruit or veggie i have in the kitchen. it's very versatile & can be creamy like oatmeal, or dry & fluffy like couscous.

1 c quinoa
1 c brown or wild rice
1 c barley
3 carrots thinly slices
1 cup peas
1 onion diced
*Mix these together with enough water to cover everything
*Add oil of your choice ( sesame, olive, canola, ect.)
Add salt, pepper, basil, majoram, thyme & mix
Bake at 350 degrees for 50 minutes

This dish is very healthy and nourishing.
You can bake this dish with chicken, just roll the chicken in oil and spices and place on top; occassionally cover the chicken with the juice from the grains.
Yummy!

I have found that if I chop up my veggies right when I get them and then have them ready for salad or stirfry they are less likely to sit in the fridge and go bad, and it takes less work to make dinner when Irie is awake!
anyone else have a helpful hint?

good day/bad day

what does a good day of feeding your family and self look like, and likewise what does a bad day entail?

a good day for my family is,

wake up and eat some yogurt, 1/2 hour later devani makes breakfast.
irie goes down for his first nap and I get a salad or sandwich
I have a very delicious healthy dinner ready when devan gets home.

snacks include fruit and veggies maybe rice cakes with hummus

a bad day looks like this

wake up don't want to cook go out to breakfast
irie doesn't want to sleep so I munch on graham crackers and cheese and whatever is easy to eat with a babe
can't pull dinner together and then I have a hungry grumpy man to deal with

snack all day long on things I shouldn't

luckily I have been having many many good days!

buns, hot flaky buns

ha ha I just had to call it that, but seriously these buns are just like the pilsbury doughboy ones!

1 cup white flour
1 cup whole flour
3 tsp baking powder
1/2 tsp salt
1/2 cup butter or coconut oil, or ghee
2 eggs
1/2 cup milk

combine dry ingredients. Cut butter into dry ingredients until pea sized balls form (it helps to use your hands)
make a well in the center and add the eggs and milk beat with a fork until smoothish. Then slowly mix in with the flour
until all is moist. Knead the dough just enough to bring it together.
Roll the dough into a rectangle 1/2 inch think. Fold into thirds. Turn the dough a quarter turn and roll out again, fold turn and roll a few more times (the more rolling and folding the flakier the biscuit)
roll out the dough one more time and cut biscuits out with a cutter or glass you can make shapes with a cookie cutter.
bake on an ungreased cookie sheet at 450 for 8-10 minutes or until the tops are golden and the bottoms brown.

you can add other things like cheese or sesame seeds or flax or whatever you like, these biscuits are great.
