1 Pork Loin

1 White Onion

2-3 Cloves Garlic

1 pkg. Frozen chopped Spinach

½ Cup Seasoned Bread Crumbs

½ Cup Blue Cheese or Feta



Chop onions and garlic, heat on medium heat in frying pan until caramelized: turn off heat. Squeeze out excess water from thawed frozen spinach and add in to pan. Mix in cheese and bread crumbs until you have a nice looking stuffing base. Pepper to taste.



Preheat oven to 425º





Butterfly pork loin, stuff with stuffing mix. Secure using kitchen twine or toothpicks. Rub olive oil and pepper the outside of the pork loin.



Cook at 425º for 30 minutes.

Drop temperature to 350º.

Cook for 20-30 minutes or until internal temperature reads 150º.

Let rest for 10 minutes.
