In the airport, this huge garbage bag full of green chilli sprung a leak on me, spilling slimy green chilli juice all over the place, forcing an emmergency landing of it into a wastebin. Tragic. So much for my plan of bringing some back from my home back to my other home.

I don't know how well they ship, I had a fantasy of making a roasting stand in Ashland last fall, outside the co-op last fall they had a pinche little roasting thingy roasting green chile these crappy tasting anehiems grown in eastern oregon that tasted like shite for like several bucks a pepper, avg. anyways, I thought to myself "i could do better". Don't know how they would ship though, unrefrigerated the have a pretty small life span. -

They are roasted and dried completely whole (stems, seeds and all) and all you do is re-hydrate them in a little bit of warm H2O. I think they are far better than Hatch's frozen ones, since I think freezing damages them on a cellular level, where drying merely concentrates their flavor!

we jsut froze like a pound of em. it will loose flavor but it's ok...we know where they came from... -

Wed, October 5, 2005 - 9:16 PMoh my gosh. dried new mexico chile on popcorn sounds absolutely delicious. ya, what's the process you use? i've never seen them dried whole before. i've seen chile powder, but that's powder, that doesn't sound like what you're talking about. with most things, i find that you have to use more if it's dried because any alterations makes it lose flavor. dry vs. the real thing. dry is a good option to have. it's good to have options. -

about a year ago, I had my mother send me fresh green chile from Bueno.
The really good stuff that they are roasting during harvest season.
All threw out the towns and hills of New Mexico.
there was was minimal waste, you just send it like a regular package,
then you roast and freeze your self.
I would suggest that you put them in smaller zip lock bags. So that you don't have to
use up a huge bag at once.
Lets hope the bags don't break this time.
