upon my departure from santa fe over a year ago, i knew life would never be the same without green chile. i never knew that it would enter my mind as often as it did. now i have returned with my love from oregon and he now understands what all of my talk of the chile was about. now he is the one who is always requesting "something with green chile" when we discuss what to eat. i think it would be great to exchange recipes using green chiles on this tribe. if anyone else joins, maybe we can actually get it going. we like sandwiches with green chile, tomato, avocado, sprouts, and tofurky (we are vegan). anyone who has any good recipes, vegan or not, is welcome to share! i am CRAZY about green chile! ~crystal

veg dinner last night....recipe

made a great vegetarian green chile stew for dinner last night. was craving posole but had no hominy so....

heat up a big soup pot and add a bit of oil. quickly caramelize 1/2 of a butternut squash (diced), 2 green garlic and 2 leeks (sliced), 1/2 green cabbage (chunked), 8-10 chopped sundried tomatoes. When browned slightly, add in 2 cups red (or regular) quinoa, 2 handfulls crushed dried new mexico green chiles, and water (or broth) to cover. When the quinoa is mostly cooked (15-20 min), turn off the heat, add in 2 handfulls of fresh sugar snap peas (edible podded), and an armload of washed spinach. Let sit for 10 minutes, then stir well. Adjust spices to taste. I topped mine with plain goat yogurt (a sour cream substitute for me) - very hearty and yummy!

I spoke with Linda, and she is very helpful, and will answer any questions you may have about the chile'.
They'll take a credit card order, and ship fedex. You can get a tracking # and follow your chile' as it gets to you.

In the airport, this huge garbage bag full of green chilli sprung a leak on me, spilling slimy green chilli juice all over the place, forcing an emmergency landing of it into a wastebin. Tragic. So much for my plan of bringing some back from my home back to my other home.

It is true, no one can who has tasted the green goodness can stray far for very long. I had to come home for a little while just to get my fix! I know it's not roasting season, but I can get my hands on some tasty chile that I'm planning to bring back with me to Tacoma. If anyone has an order to put in, I might be able to help you out ; )

Why are you so delicious? I have to eat you everyday to feel okay. When I moved to California I couldn't find you anywhere! It was so awful, I tried to pretend those greyish-green canned jalepenos were you but it just wasn't the same. Thank god I moved back to New Mexico where you are abundant. Maybe sometime we could like, you know, hang out....at least until I get hungry anyway....

Now that the Lincoln County Grill has closed down I have no green or red chile connection. Does anyone know of any in the North Dallas area? There are lots of California style and Mexico City style restaraunts, but no New Mexico style that I have found. The local tex-mex restaraunts use relly old chile (so old it's brown instead of red) or some other kind of pepper.
