nitrates?

Someone told me the other day I shouldn't make pureed carrots from scratch because of the nitrates. Is this some weird mis-information put forth by baby food companies? I've been giving Phoebe homemade carrots for months now.

    there are nitrates in root veggies like beets & carrots & spinach, nitrates are found in soil, therefore root veggies ... the story goes that babies introduced to high-nitrate foods before 8 months to a year could possibly convert nitrates to nitrites (those ickies found in hotdogs, sausages, bacon) and cause an oxygen-deficient hemoglobin reaction.

    i'm sure you're okay, but as always, ask your provider if this seems to be an issue among their patients making homemade baby food. i'll bet it isn't a big deal.
