&lt;br/&gt;Cotton candy has delighted children for a century. Now it may have found a new role: helping scientists grow replacement tissues for people.
&lt;br/&gt;
&lt;br/&gt;The flossy stuff may be just right for creating networks of blood vessels within laboratory-grown bone, skin, muscle or fat for breast reconstruction, researchers suggest.
&lt;br/&gt;
&lt;br/&gt;Dr. Jason Spector of New York-Presbyterian Hospital/Weill Cornell Medical Center and Leon Bellan of Cornell University present their preliminary research in a paper published online this week by the journal Soft Matter.
&lt;br/&gt;
&lt;br/&gt;Here's how their technique would work:
&lt;br/&gt;
&lt;br/&gt;First, you pour a thick liquid chemical over a wad of cotton candy. Let the liquid solidify into a chunk, and put that in warm water to dissolve the candy. That leaves tiny channels where the strands of candy used to be. So you have a chunk of material with a network of fine channels within.
&lt;br/&gt;
&lt;br/&gt;Next, line these channels with cells to create artificial blood vessels. And seed the solid chunk with immature cells of whatever tissue you're trying to make. The block is biodegradable, and as it disappears, it will gradually be replaced by growing tissue. In the end, you get a piece of tissue permeated with tiny blood vessels.
&lt;br/&gt;
&lt;br/&gt;So far, the researchers have made these blocks of material and run rat blood through the channels within. While they may eventually switch to something other than cotton candy as the research proceeds, Bellan said he hopes to stick with the inexpensive stuff as long as possible.
&lt;br/&gt;
&lt;br/&gt;Spector, who keeps a jar of jelly beans on his desk, said he enjoys cotton candy and that with this project, "it's taken on a whole new meaning."
&lt;br/&gt;
&lt;br/&gt;But don't offer any of the stuff to his research partner.
&lt;br/&gt;
&lt;br/&gt;"I actually hate cotton candy," Bellan said. "It's disgusting. I won't eat it."&lt;/div&gt;

    <summary type="html">&lt;div&gt;To get cotton candy in S.C. that is not pre-packaged, all one needs to do is walk down the warf (pier next to boardwalk) and go to the candy shop, Marinis and ask for it.  There is another candy shop (also a Marinis) walking distance from the boardwalk on Pacific Ave (just before the El Palomar building).  They are small but they even have buy one, get one free from time to time (only during the week). I hope that helps.&lt;/div&gt;

None of it is premade - when you order it, they walk over to the machine and you get to watch them make it for you.  They are open 11am-5pm on the weekends and parking is free!  During the summer they will be open during the week as well (June 20 - September 5).&lt;/div&gt;

    <summary type="html">&lt;div&gt;Cotton Candy (also known as candy floss or fairy floss) is a form of spun sugar that is produced in a special machine and sold at fairs. Many people consider eating it, along with toffee apples, part of the quintessential experience of a visit to a fairground. Eating cotton candy is only part of the attraction, however - watching it being made often fascinates children and adults alike. It is sweet and sticky, and though it feels like wool to the touch it readily melts in the mouth. It does not have much of an aroma although the machine itself has a cooked sugar smell when in operation.
&lt;br/&gt;
&lt;br/&gt;Spun sugar has been a culinary staple for many years. It was popular in Italy in the fifteenth century [1] (http://wv.essortment.com/historysugarca_ruef.htm) but making it involves dipping a fork in molten sugar, pulling the fork out and allowing the sugar thread to solidify. The fork is rapidly moved back and forth above an oiled upside down bowl and the resultant mass of sugar threads is removed from the bowl and squashed up into a ball before putting on a plate with other desserts such as ice cream.[2] (http://digital.lib.msu.edu/projects/cookbooks/display.cfm?TitleNo=49&amp;amp;amp;PageNum=33) This form of spun sugar is popular in restaurants and at dinner parties but is too labour intensive to be used in situations where whole crowds of people are potential customers. A candyfloss machine is thus imperative to selling the product commercially.
&lt;br/&gt;
&lt;br/&gt;One machine was invented by two Nashville candy makers, William Morrison and John C. Wharton, in 1897. They invented an electric machine that allowed sugar to be poured onto a heated plate, which melted it. The plate spun very quickly and so pushed the molten sugar through a series of tiny holes by centrifugal force.[3] (http://www.uspto.gov/patft/index.html) The text of their patent read:

&lt;br/&gt;    "To all whom it may concern; Be it known that we, William J. Morrison and John C. Wharton, citizens of the United States, residing at Nashville, in the County of Davidson and State of Tennessee, have invented certain new and useful Improvements in Candy-Machines, of which the following is a specification. Our invention relates to improvements in candy-making, or, as commonly called, "candy-machines," in which a revoluble or rotating pan or vessel containing candy or melted sugar causes the said candy or melted sugar to form into masses of thread-like or silk-like filaments by the centrifugal force due to the rotation of the vessel. The object of our invention is to obtain an edible product consisting of the said filaments of melted and "spun" sugar or candy."
&lt;br/&gt;
&lt;br/&gt;        — U.S. Patent #618,428 January 31, 1899. Application filed December 23, 1897. 
&lt;br/&gt;
&lt;br/&gt;They first used the machine in public at the 1904 St. Louis World's Fair. They called the product "fairy floss" and sold portions of it in cardboard boxes for 25 cents per serving. This was very expensive that the time; the price was half the admission cost of the fair itself. Nevertheless, they sold 68,655 boxes. The term "cotton candy" was not used to describe the spun sugar for at least another fifteen years, while the term "fairy floss" continues to be used in many parts of the world.
&lt;br/&gt;
&lt;br/&gt;Some sources, including The Dictionary of American Food and Drink, report that a different inventor, Thomas Patton, invented the machine in 1900 at the Ringling Brothers and Barnum and Bailey Circus. &lt;br/&gt;
&lt;br/&gt;Cotton candy was fantastically successful in 1904 and is still very popular at fairs today. Modern machines work in much the same way as the original. The centre part of the machine consists of a small bowl into which sugar is poured and food colouring added. Heaters near the rim melt the sugar and it is spun out through a myriad of tiny holes into a large bowl which catches it. The operator twirls a stick or a cone around the rim of the large catching bowl and picks up the candy. Because candy floss consists of mostly air portions, servings are large. A typical candy floss cone will be a little bigger than an adults head, and they look enormous to a child. However, although they are bad for the teeth as are all sugary snacks, they are not particularly high in calories because they contain a fairly small amount of sugar. A typical candy floss contains less sugar than a can of most (non diet) soft drinks. &lt;/div&gt;

    <title>OK, who's going to be the test kitchen?</title>

    <summary type="html">&lt;div&gt;So, you want to make cotton candy but have no idea where to start? Not to worry! Cotton candy making requires surprisingly few supplies.
&lt;br/&gt;To begin with, you're going to need sugar. Sugar is the main ingredient in cotton candy. You'll also need food coloring if you want to make it pink for example, or blue. You'll also need water and flavorings - although the flavoring isn't necessary, just in case you want it be other than sugar flavored!
&lt;br/&gt;Now if you'd like to make homemade cotton candy - similar to the traditional spun candy that was popular centuries ago - it's a simple process. Well, almost.
&lt;br/&gt;First there are the ingredients you'll need to get:
&lt;br/&gt;-5 cups sugar (granulated white)
&lt;br/&gt;-1 1/3 cup light corn syrup
&lt;br/&gt;-1 cup, 2 tbsp water
&lt;br/&gt;-flavorings
&lt;br/&gt;-food coloring
&lt;br/&gt;-non-stick vegetable oil spray
&lt;br/&gt;-saucepan (approx 2 qt)
&lt;br/&gt;-2 long handled spoons (wooden preferred)
&lt;br/&gt;-wire whisk (one that you won't miss)
&lt;br/&gt;-wire cutters
&lt;br/&gt;-candy thermometer
&lt;br/&gt;-tempered glass bowl
&lt;br/&gt;-newspaper or garbage bags
&lt;br/&gt;
&lt;br/&gt;You're probably looking at the list wondering what in the world some of this stuff is for, right? I'll explain. First you're going to need to use the wire cutters to cut off the rounded bottom of the whisk. We don't really need a whisk, just the metal tines that we'll create by cutting off the bottom. Next, use the garbage bags or newspaper to cover the floor where you'll be working. You certainly don't want melted sugar on your floor.
&lt;br/&gt;
&lt;br/&gt;Get a large object (such as a book) and position the two spoons on the counter so that the handles stick out into the air with the other end underneath the book. Spray the ends with the non-stick vegetable oil spray. That takes care of your work area, now onto mixing things up.
&lt;br/&gt;
&lt;br/&gt;-Mix sugar, corn syrup and water in the saucepan. Cook on about medium heat until the mixture reaches 320 degrees Fahrenheit. Use your candy thermometer to verify the temperature. Be sure that it doesn't go over 320 degrees or it will begin to turn brown.
&lt;br/&gt;
&lt;br/&gt;-When the mixture has reached that temperature, remove the pan and pour into your tampered glass bowl. Use pot holders if necessary, it will be very hot. It is necessary that you remove it from the pan as soon as possible, otherwise it will continue heating (and turn brown).
&lt;br/&gt;
&lt;br/&gt;-If you want to add color or flavor, this is the time to do so. Mix it in immediately.
&lt;br/&gt;
&lt;br/&gt;-Using the end of your modified whisk, dip the end with tines into the mixture and let some excess drip back into the bowl before waving it over the spoon handles. The mixture should land on the handles. Continue doing this until the mixture is gone. You have approximately 10 minutes before the mixture becomes too hard to wave properly. If it does happen to become hard, just pop it into a microwave for 3-5 minutes, or until it's liquefied again.
&lt;br/&gt;
&lt;br/&gt;-Once all the mixture is all used, wait for it to harden and then carefully remove and eat - or save for later!
&lt;br/&gt;
&lt;br/&gt;Alternatively, you could use an upside down bowl (that's been sprayed with non-stick spray) and make strands with your whisk. This would give you results closer to the original spun sugar.&lt;/div&gt;

    <summary type="html">&lt;div&gt;Found it a week ago or so, at Pier 39.    I know what you're thinking, what the fuck were you doing down there?  I was paying a visit to the Aquarium of the Bay, a small but very nice aquarium.  Anyway there's a ice cream place on the pier that has cotton candy they nmake right there.  $3 a bag (pier prices).  Don't buy it at the stand where it 50 cents more, go into the store.
&lt;br/&gt;
&lt;br/&gt;Now who really wants to spend anytime at the pier? No one I know.   So here's what you do.  Drive there with a friend have them circle while you run in and get the cotton candy.&lt;/div&gt;

&lt;br/&gt;Today I attempted to make a homemade cotton candy machine, as well as some cotton candy. I was partially successful.
&lt;br/&gt;
&lt;br/&gt;Essentially, a cotton candy machine is two bowls one nestled inside the other, with the central bowl being attached to a motor that makes it spin, and having a perforated wall and a heating element. The heating element melts the sugar you place in the inner bowl. Once the sugar has melted the motor kicks in and the centrifugal force presses the sugar against the bowl's wall. The small holes in the wall and the centrifugal force cause the melted sugar to extrude outwards in very thin strands, which crystallize as they hit the relatively cold air.
&lt;br/&gt;
&lt;br/&gt;My $5 cotton candy machine attempt consists of two plastic bowls, the interior one being some sort of small round food container with a lid (you don't want 320F melted sugar flying your way, let me tell you), a large bolt with a number of nuts and washer to use as a shaft, and a drill I already had. I drilled a number of small holes (1/16th) on the wall of the inner bowl. Drill the high enough on the wall so that the bowl can hold a good amount of sugar without reached the holes when not spinning. I then drilled a hole large enough for the bolt, in the bottom of both bowls. I attached the bolt downwards to the inner bowl with a nut, some washers and some crazy glue. The bolt has to rotate the inner bowl. I then inserted the bolt through the outer bowl and used a few nuts to hold it in place, but did not tighten them. You don't want the outer bowl to rotate with the inner one. Finally, attach the nut to the drill.
&lt;br/&gt;
&lt;br/&gt;As you've noticed there is no heating element. Rather, I used the stove to melt the sugar. This was more difficult than I expected. I started trying to melt a small amount of granulated sugar, which ended up becoming caramel and too thick. I tried again with a small amount of sugar and some water, which just resulted in syrup that did not crystallize. Working with a small amount of sugar over a stove is difficult, as you can't control the temperature precisely. You want it to be around 320F. I recipe I found at food.com for homemade cotton candy (but not for a cotton candy machine) that recommended 4 parts sugar, 1 part corn syrup and 1 part water. I used 2 cups of sugar, which was enough material to not burn easily over the stove. This recipe did the trick.
&lt;br/&gt;
&lt;br/&gt;One it reached the right temperate I put some of the sugar into the inner bowl, put on the lid, and started the drill. I ended up with something looking less like cotton candy and more like a birds nest. Part of the problem is that I did not have a cone to scoop up the cotton threads at they flew out, and the threads where less flexible than what you'd expect from cotton candy. I also need an outer bowl with higher walls (did I mention you don’t want to have 320F flying sugar land on you?).

I was just at the Santa Cruz Boardwalk, and the only cotton candy available was prepackaged and hanging from the wall of some snack booth or other. Have deep-fried twinkies really eclipsed cotton candy in terms of popularity? This is just wrong.

&lt;br/&gt;I remember when the cotton candy booth had some apple-cheeked young person spinning clouds of pink candy on paper cones before your eyes. Now you're lucky if you can spot the little pink or blue bags hanging in the back of the booth like so many feather dusters.

    <summary type="html">&lt;div&gt;Venice was importing sugar from India by the 13th century. By the 15th century, Italian aristocrats were creating sugar sculptures for their tables. Spun sugar was popular during the Renaissance. It was made by dipping a fork in and out of molten sugar and allowing the sugary threads to solidify in the air. An American patented a similar process in 1900. He used a rotating plate and threaded the sugar through a fork. He is credited with introducing his candy treat to the Ringling Brothers Circus. cAbout the same time, two Nashville candy makers invented an electric machine that melted sugar and spun it through tiny holes. They called their candy, Fairy Floss. Fairy Floss made its debut in 1904 at the St. Louis World's Fair. &lt;br/&gt;Are you familiar with the Church of the Subgenius where JR "Bob" Dobbs is god?  Slack is part of the religion.  Bob wants you to have slack.  Slack is the free car wash that comes with a tank of gas. Bobzilla also wants you to have slack.  Anorther thing Bobzilla has in common with JR "Bob" Dobbs is that they both cuss alot, but that's another story (still worth mentioning though).  Think of this coton candy  as slack, the slack you get as a result of having the incredible good taste to be a member of this tribe.  In other words it's free.  If you are outside the bay area shipments go out via express mail on Tuesday since Moonday (not a typo) is a holiday.  &lt;/div&gt;

&lt;br/&gt;So now I am depressed.

&lt;br/&gt;Yes, the car passed the smog test....
&lt;br/&gt;
&lt;br/&gt;but I somehow feel that I, Confetta, 
&lt;br/&gt;
&lt;br/&gt;FAILED THE COTTON CANDY TEST.

&lt;br/&gt;I was ready to put out the cash...
&lt;br/&gt;but when I looked more closely on the bag it said "3 delicious flavors &amp;amp; colors:

&lt;br/&gt;Cotton Candy PINK
&lt;br/&gt;

&lt;br/&gt;

&lt;br/&gt;I hate pina colada....
&lt;br/&gt;

&lt;br/&gt;
&lt;br/&gt;So the way I was thinking....was...I would have to toss at least 1/3 of it...possibily 2/3 and maybe all of it.

&lt;br/&gt;Now I am sittin' here just wondrin' what exactly DOES Pina Colada Cotton Candy TASTE LIKE?
