I got some frozen gyoza and would love it if I could recreate the delicious sauce they serve them with in Japan. Can anyone help me out?

I add some grated daikon and shichimi (7 spice) if i'm feeling fancy.

Soy sauce
Fresh squeezed lemon juice
Fresh grated ginger
Fresh grated daikon radish
Minced scallions
Crushed toasted sesame seeds
I don't know the exact ratios (I always eyeball and mix to taste), but here's a rough estimate:
1 cup soy sauce
1 lemon
1 teaspoon ginger
1-2 Tbs. daikon
1 scallion
1/4 teaspoon crushed sesame seeds
Mix together, enjoy! -

Sun, February 5, 2006 - 2:14 PMIsn't it some shoyu and some rayu? I think it's rayu, that reddish oil that comes in this tiny bottle. I had some just the other day, but I threw it away because it was getting old.

Mon, February 6, 2006 - 9:19 PMThanks everybody, I tried it tonight... I just used what I had in the house, so ginger, shoyu, a little bit of lemon juice, and rice vinegar... plus a pinch of sugar. It turned out great!

Mon, February 12, 2007 - 2:33 PMWhen I was in Japan (for almost 5 years - I came back in 2000), there was a restaurant my wife and I used to frequent (actually, there was more than one :)). They had you make your own gyoza sauce with the ingredients right at the table. The ingredients were soy sauce, sweet vinegar (you can by this in an oriental market or make your own by heating vinegar and adding sugar), and either spicy sesame oil or regular seseme oil.
It tastes very similar to the stuff you can buy in a bottle (except for the spicy seseme seed oil).

Tue, March 6, 2007 - 1:09 PMWell, I am half Japanese and in my family we use soy sauce and sesame oil. You don't need to use a whole lot of sesame oil though or you will over power the flavor. If you don't have sesame oil you can purchase it at an asian supermarket or if you like, most asian supermarkets also carry the sauce already made. -

I love gyoza!
Every place always has soy sauce, vinegar, and rayu(spicy sesame oil) on the tables
for you to mix in your own rations.
some people like more vinegar than others. -

and you can add some dried red chili peppers in a bottle of sesame oil to make rayu, too ... -
