To one quart of pumpkin puree add 1 1/2 teaspoons pumpkin pie spice and 4 tablespoons of honey (or to taste) and then blend.

Cover a cookie sheet with plastic wrap. pour mixture over and spread thinly.
Set oven on low and dry the puree in oven until leather has a bendable texture, not brittle. Check often.
Be sure to prop the oven door open with something.
Roll the leather up in the same plastic wrap and cut with scissors into desired chunks.
Store in fridge or freezer.

You could also use a food dryer of course.

dip in whipped cream at serving? Cuz I loves me some pumpkin pie with whipped cream! And I see my dehydrating gadget on the top of that storage closet in the garage, I tell myself often to drag it down and use it, so far I continue to ignore that advice.

Speaking of pumpkins... I bought a large white one last night and wonder if it will be edible? I'll let it decorate my altar space til at least after Halloween, but I wonder if the whole thing is white, or is just the rind 'ghostly' and the flesh is orange? It'd be pretty weird to have a white pumpkin pie....
