recipes for the holidays

I want to change my holiday menu...getting tired of my cornbread stuffing....cream of carrot soup...pumpkin cheesecake...etc recipes...any ideas?

I need easy and yummy recipes..if anyone cares to share... recipes that are veggie oriented would be ideal I think. I love side dishes

      Hey Rev it has become a holiday tradition for our family to have GREEN RICE!!! It is a WONDERFUL veggie dish! You cook some rice and mix cooked broccoli, sauted onions and bell peppers, mushrooms, cream of celery soup, and velveeta cheese in it. Be careful with your salt because the cheese gives it some degree of saltiness. You can top it with your favorite casserole topping and brown it in the oven. YUMMY!!! I eat more of that than anything else!!!! I love it!!!

        One of my favorite farmers at the farmers market tells me to make green salsa from tomatillos, using cilantro and other fresh herbs.

        A thought on cornbread. A few years ago, I was experiencing some lactose-intolerance and started keeping lactaid-free milk in the house. When it was time to make my contribution for Christmas, I made the cornbread with this milk. I make mention because lactaid-free milk is far sweeter than regular or skim milk. (I didn't realize this initially...) My nephews have raved about this recipe like I was some celebrated cook. Truth is this is a box recipe from Trader Joe's...but simply with sweeter milk than their moms use. Just a consideration...

        Also, allow me to share a recipe that is a favorite for any holiday:

        Caramel Brownies

        German Choc. Cake mix
        14 oz pkg caramels
        1 can evaporated milk
        1 stick butter (melted)
        6 oz chocolate chips
        1/2 c. pecans (crushed)

        In mixing bowl, blend cake mix with 1/4 c. Evaporated Milk and 1/2 c. Butter (melted). In long lightly greased pyrex dish, spread a layer of the cake mix. Bake in a preheated 350 oven for 8-10 minutes, or until cake lightly bubbles. Meanwhile, mix remaining Evaporated Milk and 1/4 c. butter with unwrapped caramels over medium heat. Remove cake from oven, and immediately sprinkle chocolate chips over warm cake. Sprinkle caramel mixture overtop of this, and sprinkle pecans overtop of this mixture. Finally spread remaining cake mixture overtop of this. Bake at 350 for 15 minutes, approximately. Cool in refrigerator for a few hours. Cut into small pieces and serve. These are rich, and therefore, pieces need not be made very large. Enjoy!

          I actually found a couple of recipes....

          bulgur and grape salad

          1 cup bulgur wheat
          1 cup of seedless red grapes cut into quarters
          1 cup diced celery (3 stalks)
          1/3 cup chopped toasted walnuts (or favorite nuts)
          1/4 chopped parsley
          3 tbs dried currants
          3 tbs olive oil
          3 tbs white balsamic vinegar
          2 tbs minced shallots
          salt and pepper

          1. begin by cooking bulgur. Boil one cup of water, and stir in bulgur, remove from heat and cover until the water is completely absorbed. Once the water is absorbed the bulgur will become tender and cooled to room temperature for about 1 hour.

          2. Transfer the bulgur into a large bowl and mix in grapes, walnuts, parlsey, celery, shallots, currants. Add your oil and vinegar, with some salt and pepper to taste. Then toss.

          serves 6

            Karen, I'm sure it can be bought at Trader Joe's. I've not been the one to make this recipe in years. When I did make it, Trader Joe's wasn't a store within proximity to where I lived. Now I could never do without the place, I know. ;o)
