Different meaning of "sober"

It seems a common use of "sober" means "you used to be addicted but got over it". Sometimes there is an added meaning of "if I'm tempted too much, I might go back to over -indulging".

I've never been any of that, I've just never wanted to drink (at all), nor do drugs, so I've consider myself sober, or is there a different word I should be using?

No "Sober" works in your situation. There is a definite difference between those who have suffered from addiction to a controlled substance and those who choose to abstain entirely. There are several opinions on this subject. One thing that the various 12-step programs teach is that if you are an addict, you never truly get over it. You have to take continuous action in order to fight the phenomenon of craving.

There are varied forms of the Twelve Step program, people in Narcotics Anonymous say that they have been clean for x amount of days, years or months, while in Alcoholics Anonymous the term Sober is used.
