      <description>&lt;div&gt;So, how is it that I'm not going to Pennsic this year yet I have pennsic prep to do?
&lt;br/&gt;
&lt;br/&gt;Why, BAKING of course! 
&lt;br/&gt;What am I making?  Chocolate Chip Banana Nut Bread (as per my favorite elf's request), and Ginger cookies of Doom (for those folks who don't partake in chocolate). 
&lt;br/&gt;Aaron is heading up this evening- if I usually bring you cookies at war (usually baked at war of course, alas, not this year)- please stop by our camp and ask Aaron.  They'll be freshest the first few days.  
&lt;br/&gt;Stop by!!! 
&lt;br/&gt;I will be at Pennsic in baking spirit at least. 
&lt;br/&gt;Oh, and will you all please drink an Iced Siamese coffee for me from YIV.  
&lt;br/&gt;I miss everyone already.  HAVE FUN ON MY BEHALF!!! &lt;/div&gt;

      <title>The Great Pumpkin Cake</title>

&lt;br/&gt;Pumpkin is one of those yummy seasonal flavors - and today the thing to bake is The Great Pumpkin Cake.

      <title>Yardley Inn Peach Melba French Toast - Muah-ha-ha-ha!</title>

      <description>&lt;div&gt;My Mum made this when we visited my family (and penguins!) in November.  SOOoooo good! 
&lt;br/&gt;
&lt;br/&gt;Ingredients:
&lt;br/&gt;1 pounds fresh or frozen peaches (or 2 cans) sliced and drained
&lt;br/&gt;1/2 c butter
&lt;br/&gt;1/2 c honey
&lt;br/&gt;1/2 teaspoon almond extract or vanilla
&lt;br/&gt;6 eggs
&lt;br/&gt;2 c milk
&lt;br/&gt;French bread
&lt;br/&gt;nutmeg
&lt;br/&gt;
&lt;br/&gt;Heat butter and sugar together until sugar dissolves and add almond extract.  Pour into 9 x 13 inch baking dish.  Cover with sliced peaches, then with thick slices of bread.  Blend milk, eggs and almond extract (or vanilla) and pour over the bread.  Sprinkle with nutmeg.  Cover and refrigerate overnight or for at least 1/2 hour. 
&lt;br/&gt;Bake uncovered, for 30-40 minutes at 350 degrees.  Serve with raspberry sauce and top with whipped cream* and dust with nutmeg and sliced almonds.
&lt;br/&gt;
&lt;br/&gt;*whipped cream- not out of a can, but real heavy cream that you whipped and added a tiny bit of vanilla to (so also not Cool Whip and unsweetened). 
&lt;br/&gt;
&lt;br/&gt;Raspberry Sauce
&lt;br/&gt;one 12 oz can Dole frozen Country Raspberry juice (or other berry blend) undiluted
&lt;br/&gt;3 tablespoons cornstarch
&lt;br/&gt;2 c fresh or frozen raspberries
&lt;br/&gt;Heat juice concentrate and cornstarch together until thickened, stirring constantly.  Add raspberries. Serve alongside Peach Melba French Toast. 
&lt;br/&gt;Mmmmmmm! &lt;/div&gt;

      <title>A cookie recipe...</title>

      <description>&lt;div&gt;at long last....
&lt;br/&gt;Samira's Ginger Cookies
&lt;br/&gt;1 1/2 c butter (not margarine)
&lt;br/&gt;2 c sugar
&lt;br/&gt;2 egg
&lt;br/&gt;8 Tbs molasses
&lt;br/&gt;4 c flour
&lt;br/&gt;4 tsp baking soda
&lt;br/&gt;2 tsp cinnamon
&lt;br/&gt;2 tsp cloves
&lt;br/&gt;2 tsp ginger
&lt;br/&gt;Cream together butter and sugar
&lt;br/&gt;Add eggs and molasses until well blended
&lt;br/&gt;Sift together flour, soda and spices.  I usually add a dash more cloves and ginger (yum!)
&lt;br/&gt;Add dry ingredients into creamed ingredients in two portions.
&lt;br/&gt;Refrigerate 2 hours (or freeze to bring to Pennsic!)
&lt;br/&gt;Roll into walnut size balls
&lt;br/&gt;Roll in sugar (colored sugar for holidays, organic raw sugar if you want to pretend to be healthy- ha! ha!)
&lt;br/&gt;Place 2 " apart on greased cookie sheet
&lt;br/&gt;Bake at 350 (preheated) 11-12 minutes (or so).
&lt;br/&gt;Eat A LOT or bring to friends house so you don't eat them all.
&lt;br/&gt;Enjoy! &lt;/div&gt;

      <title>Lebanese Tea Cookies</title>

      <description>&lt;div&gt;Here's one of my favorite cookie recipes!!!  (Slightly sweet cookies that are great to take to haflas)
&lt;br/&gt;
&lt;br/&gt;1/3 cup  Vegetable oil
&lt;br/&gt;1/2 cup  Butter, softened
&lt;br/&gt;1/3 cup  Sugar
&lt;br/&gt;1 tbs Orange juice
&lt;br/&gt;¼ - ½ tsp almond flavoring (depending on how almondy you want it)
&lt;br/&gt;1 tsp Baking powder
&lt;br/&gt;1/2 tsp Baking soda
&lt;br/&gt;2 cups  All-purpose flour
&lt;br/&gt;
&lt;br/&gt;Beat oil, butter and 1/3 cup sugar till blended.  Add in OJ, powder and soda and mix well.
&lt;br/&gt;
&lt;br/&gt;Mix in flour, bit by bit, to make a soft dough. 
&lt;br/&gt;
&lt;br/&gt;Shape dough into small “logs” (1.5 – 2 inches long) bake on an ungreased baking sheet 350 degrees.  20 minutes or  till golden along the bottom edge.  Cool on a wire rack.
&lt;br/&gt;
&lt;br/&gt;3/4 c  Sugar
&lt;br/&gt;1/3 c  Honey
&lt;br/&gt;¼ c Orange Juice
&lt;br/&gt;¼ c water
&lt;br/&gt;1/3 c  Finely chopped walnuts
&lt;br/&gt;
&lt;br/&gt;Heat ¾ cup sugar, the honey and ¼ c OJ and ¼ c water on the stove.  Bring to a boil and cook gently for 5-10 minutes.  The syrup should be sticky and start to thicken SLIGHTLY.
&lt;br/&gt;
&lt;br/&gt;Dip the top of the cooled cookies into the syrup, hold for a second (to let it cook very slightly, makes it stickier!) and then press sticky side down into a bowl of finely chopped walnuts.  Set aside to dry.  I suggest using tongs for this as the syrup will burn your fingers ;-)
&lt;br/&gt;
&lt;br/&gt;You can add a splash of rose water to the syrup mixture in place of or in addition to the OJ (if you are not using the OJ at all, add a bit more water).
&lt;br/&gt;
&lt;br/&gt;It also turns out well with no almond flavor, using the dash of rosewater with no OJ, in the syrup and using crushed pistachios to top them. &lt;/div&gt;
