I would like to can a chili starter? You know, chilli con carne without the meat, that way all you have to do is add your choice of meat and voila! Dinner is served. Ideas?

-pinto beans with roasted new mexico green chiles and posole
-red beans with cinnamon, cumin, garlic and chile powder, maybe a smoked jalapeƱo or two
-black beans with cuban spices and carrot
etc etc etc bean mix ideas are endless! -

Most cook it with park tripes...but as my mother was deathly allergic to pork, mom used beef tripe, yellow onions, mellow chili peppers, a chicken stock, cilantro and tomato for seasoning. Salt and pepper was added by the person eating it. It was considered poor folks food...but I always considered it a treat. I went to a trendy restaurant last month and it had posole on it's International soups menu. For the amount they charged for a bowl my mother could have made ten pots worth. It's interesting to see "poor folk food" be it Hispanic, French or Thai, suddenly become haute cuisine. -

Fri, April 10, 2009 - 9:14 PMthank you for the explanation, sounds nummy, although I have to admit I've never dealt with tripe in any way. Would have to cool down the hot spices for me - but then I'm such a wimp when it comes to pepper hot I can't eat most commercial canned chili either. That's the nice thing about cooking. Poor mans food is a good thing around here though... I'd have to use some other meat for cheap - cause I don't know where to shop for tripe, but have made stew with beef heart before that is wonderful. Have no idea where I'd find Hominy either, but at least I know what it is, and like it. will have to try it one of these days.

Wed, September 16, 2009 - 10:46 AMI have loads of tomatoes ready for canning, but would really like to do a veggie chilli canned if possible. Do you think the acidity would be high enough if canned using a BWB? Can't seem to find a canned veggie chilli recipe. I maybe use the one I have for regular chilli con carne minus the beans and meat. Hmmmm...
