ug! the coworkers are all pigging out on a huge plate of macaroons.... my former FAVORITE cookie before going vegan. the smell is driving me nuts! smells so good!

Fri, October 20, 2006 - 8:14 AMokay! i made...um.. something! since i couldn't seem to find any vegan recipes that had any concrete reviews, or that anyone here had tried, i combed through many veg and not veg recipes and made up my own! i think this is my first official made up baking recipe. i feel like a proud parent. i make up my own stir fries and soups all the time, but i haven't improvised much with baking yet.
i don't know if i'd call these macaroons. they didn't quite get that dense, chewy texture i remember from other macaroons, but whatever they are they are good! they're lighter and less chewy, and very banana-y, which i loved.
so, without much further ado, i give you BANANAROONIES!
all measurements are kind of approximate, since i was making it up as i went along:
1 very soft banana, mashed very well
2 tsp vanilla
1/2 cocoa powder (the baking kind)
about 1/4 cup powdered sugar (vegan of course), maybe a little more or less to taste (i don't like stuff too sweet)
1-2 tbsp earth balance butter (i'm wondering if just a little salt would suffice instead?)
about 8 oz shredded coconut
i started with a 10 oz bag and just kept adding it until it was very dry. you might even be able to add more. the dough doesn't really hold together while your mixing it, but when i just gave them a good squeeze when formed the balls and they held together just fine.
mash mash mash, then pop in a 325 oven for 15-18 minutes. made 18 little balls. i kept the size of them small, just because i was worried about them cooking all the way through, and they were perfect. -

I made Josie's Bananaroonies! for our fundraiser bake sale and they were hugely popular (they held their own with lemon cupcakes (with frosting!) rich chocolate cake and fudgy brownies! and cookies!
they were tasti LICIOUS!

yeah, yeah, where was I last week when you first posted this....
Anyhot, not only is it vegan, but it's gluten free!!
Walnut Macaroons
2 T. peeled and finely shredded sweet potato
1/2 c. unsweetened, shredded coconut
1/2 c. walnuts, coarsely chopped
1/4 sucanat (I usually subsitute plain ol' sugar)
pinch o' salt
2 T. rice flour
1/8 t. egg replacer
1/8 t. dark molasses
1 1/2 t. vanilla extract
1 t. coconut oil
1/4 c. boiling water
preheat oven to 350*F. Line baking sheet with parchment.
mix together everything from sweet potato to egg replacer, making sure that the potato doesn't turn into a clump. Make a well in the center and add in the molasses, vanilla and coconut oil, then slowly add in the boiling water. using your hands, mix til everything is encorporated.
drop about 2 T. of batter for each macaroon, and flatten each one a little. Bake for about 20 minutes. Cool and then eat, or store in an airtight container.

Potato Candy
• 3/4 cup mashed potatoes — cold
• 4 cups confectioner’s sugar (make your own confectioner’s/powdered sugar: 1 cup raw sugar + ¼ cup cornstarch in yo’ food processor)
• 4 cups shredded, not sweetened coconut
• 1 1/2 teaspoons vanilla
• 1/2 teaspoon salt
• 4 squares baking chocolate (sweet or semisweet)
Mix potatoes and confectioner’s sugar. Stir in coconut, vanilla and salt. Blend well. Press into one large or two small pans, so candy will be 1/2 inch thick. Melt chocolate over hot water, do not let water boil. Pour chocolate on top of candy, cool and cut in squares. For variations, make haystacks by forming white mixture into cones 1 inch high. Allow to stand uncovered for 20 minutes. Dip base of each cone in melted chocolate. Place on waxed paper until chocolate hardens. Yields about 100 haystacks (I gave up after 60).

Sat, July 19, 2008 - 2:32 PMso i combined my fav parts of the bananaroonie and artful vegan recipes to create some damn fine macaroons! i made a quadruple batch because i need to take them to several parties in the next few days and i've had to stack as much as possible on top of the containers so that i have to work REALLY hard before i can steal another one.
