Long story short.
I just got out of the hospital from a bad asthma attack, low oxygen & potassium levels. I was really lucky and had a great lead nurse who gave me a lot of advice and suggestions on combining both western and natural medicines. He suggested a gluten free food and a vegan or vegatarian diet. I'm told a lot of vegetables have gluten and I have no idea how to know what is and is not gluten.
is there a website, book, magazine ect...?
I've been a meat eater all my life and it seems like the transition is going to be hard for me to make. Is suggestions?

Mon, September 22, 2008 - 9:46 PMVegetables do not have gluten. Gluten is the protein in wheat, so anything with wheat in it has gluten (also rye, barley, and some other grains). This means anything made with wheat flour has gluten, most breads for example. Rice, corn, soy, potatoes, quinoa, and many other foodstuffs are gluten-free.

As far as gluten-free goes, I'm not an expert. Try finding some books on it at the library or amazon. This one seems silly but it may do the trick:

The Veganomicon that he linked to is essentially the vegan Joy of Cooking, containing lots of information about cooking basic vegetables outside of recipes, grains, and how to otherwise improvise in the kitchen. I'm also a huge fan of trying cookbooks out at the library before buying them, since you never know if a cookbook will gel with your personality and style!
I also like vegweb: www.vegweb.com for typing up a list of what i have in the fridge and finding something interesting to make, and have also been drinking green smoothies for breakfast lately as a way to ensure that I get all of my greens, and I feel great! Modifying your diet can be tough, but getting the gluten out of your diet will make a huge impact! Try quinoa, brown rice, and polenta as substitutes if you're used to eating a lot of grain in your meals!
