Please help!

Hello

I am recently vegan, and I live in an area with few substitutes available (for dairy things). I've found many recipes online to make my own cheese, and such, but it requires MimiCream (?) Anyway, I obviously can't find anything like that here, and was wondering if anyone had a recipe that I could use for a suitable cream substitute.

Any sort of help would be muchly appreciated. I'm dying here without my pizza :P

    Hi Shira,
    nutritionally you don't really need all the substitutes but it's nice to have some simple ones like tofu, rice milk or soya milk and you should be able to get them pretty much anywhere.
    Just make sure you use a lot more beans, pulses and nuts & seeds in your diet.
    You can make a kind of cream by soaking and blending cashew nuts with a little water or make almond milk by soaking and blending almonds with a little more water. You can use sunflower seeds or cashews to make "cheese". One recipe I found:
    1/2 cup fresh lemon juice
    1/2 cup Nama Shoyu or soya sauce
    3-4 garlic cloves, peeled
    3 cups raw sunflower seeds, very finely ground in a food processor

    Directions
    In a food processor combine all of the ingredients, adding the sunflower seeds last. Blend thoroughly until the resulting cheese is smooth and uniform.
    You can then shape the mixture into small "cheeses" and if you like, wrap it in green leaves.
    Spread it on crackers.

    You can probably do the same with cashews or other nuts.
