Best Vegan Cookbook ?

I'm looking for recommendations for good vegan cookbooks. Anyone have any suggestions? Are any of these books any good?

        I love, love, love the following:

        The Voluptuous Vegan
        The Mediterranean Vegan

        Also, there are a lot of vegan recipes in World of the East Vegetarian Cookbook, though it features a few egg-heavy cuisines. Almost everything but the egg dishes (street food from Philippines for instance) is easily adaptable to vegan and it'll give you really interesting ideas on how to use garbanzo flour and other thickeners that can do the function performed eggs in American dishes.

    I love the Moosewood Cookbook by Molli Katzen. It takes a few recipes to adapt to her way of cooking, but most of the things I've made from it have been just splendid.
    Also, my husband isn't vegan, so I add the optional cheese to some dishes for him and he's less likely to be grumpy about dinner. :D
    I find if I chop all my onions and garlic at the beginning of the week and freeze them, the recipes come together pretty fast.

    Veganomicon is great, and I love Vegan With a Vengeance by the same author.

    My favorite is Yellow Rose Recipes by Joanna Vaught. I haven't cooked a single meal from that one that hasn't resulted in the plates being licked clean.

    Raw: the Uncook Book by Juliano Brotman. Mouthwatering raw vegan concoctions, using ,at most, a dehydrator. Spin magazine describes it this way "The food is spectacular, lush, colorful and tactile." I agree 100%.

    I really like Appetite for Reduction, The Happy Herbivore, and The Veganomicon.

    The first two are intentionally fat-free, low-fat, etc., I've lost 90 lbs and the last 20 came from eating vegan.
