Scrambled Tofu

Has anyone tried it? I came across a recipe in a nutrition book at the library, but I didn't write it down. Does anyone have a good recipe for it?

    Just "scramble" the tofu in the pan (or mash it up before, if it's firmer, if it is really firm try squeezing it to crumbs with your hands) in some olive oil and seasoning (salt or soy sauce, pepper, herbs, paprika, whatever you like). That's really it. You can add a few copped mushrooms or cherry tomatoes, which makes it even tasier.

      C'mon man slice or crush the tofu. press the water out of it. throw it in the microwave for a couple minutes. Drain it again. Bread it fry it and repeat as neccesary.

    I have. It was good seasoned with green onions garlic, soy sauce and sesame oil. Whatever is left over can be made into stir fry later in the week.

    Saute some onion and/or garlic and whatever other veggies you might like (peppers, carrots, zucchini are all good). Add tofu that has been drained and crumbled, season with soy sauce, salt, pepper, garlic powder, nutritional yeast, some turmeric for color, etc. When tofu begins to brown, it's done. There are many variations of this from the simple to the complex

    "Late for work" Scrambled Tofu:

    lil bit o' oil
    mash up the pre-drained tofu to your desired consistency
    garlic powder
    dried chives (or onion powder)
    dash of cayenne if you want a lil boost

    throw it on some toast and run out the door while eating (as you're running late)

    I like to add all the other stuff too when I have time, but the above is simple, tasty and takes less than 5 min!

    Made just this morning for breakfast.

    (3) partially peeled potatoes grated into hash browns
    (1) thinly sliced acorn squash
    (1) medium chopped onion
    (1) small chopped shallot
    2/3 block of extra-firm tofu

    Start with a few glugs of olive oil in a nice, big frying pan. Heat accordingly.
    Toss in the potatoes, onions and shallots and squash.
    Get those hash bowns a'goin
    (1) nice big sprinkling of coarse sea salt
    a shake or two of red pepper flakes.

    About half way through cooking toss in the tofu and keep scrambling the mixture so that everything is heated evenly. Serve just as the mixture is starting to get some crustiness to it. Serve with a side ketchup or Tabasco sauce.

    Heck this isn't elegant or gourmet but if served with a some decent coffee, a side of multi-grain toast and honey along with your favorite newspaper it makes for a hell of a day starter.
