Any really good Curry dishes?

I love curry but I am looking for a dish that is good for me. I only have one dish which involves fish. I would like a dish that might just have all vegetables in it. I don't eat much meat if I do it is only chicken and fish, but vegetarian and vegan dishes I really enjoy I just don't have many, i figured there must be a curry dish out there for me.

    do you have access to a trader joe's?

    if so, heres a recipe that i made up, i've been making it a lot..i put an alternative if you can't get to trader joe's. i'm going to put the approximate amounts that i usually do, it makes about 4 servings (for me, i'm small though) so if you want to make more, just double it.

    ingredients:

    1/2 large yellow onion chopped
    15 or so baby carrots cut in half
    5 small new potatoes cut into cubes
    1 head of cauliflower cut into pieces
    20 or so green beans cut in half
    1/2 a can of garbanzo beans
    1/2 cup lentils
    1 tbsp cumin
    1/4 tsp curry powder
    1/4 tsp turmeric
    1/4 tsp cardamom powder
    1/4 tsp coriander powder
    1 can of trader joe's punjab spinach sauce (if you can't find this, any curry paste will do, but it will taste a bit different...still good though. use as much curry paste as recommended for one meal on the jar or package)
    1 cup water
    extra virgin olive oil as you need it

    boil potatoes, carrots and lentils in separate pots until tender, drain

    heat some olive oil in a large skillet on medium heat, add cumin and fry until they start to pop and there is a fragrance. add onions, cook and stir until transparent. add cauliflower and green beans, cook for a couple of minutes, add the rest of the veggies and spices and mix around really well until the spices are evened out. add punjab sauce (or curry paste) and water, stir until mixed. let simmer until water evaporates and everything looks like a thick pastey veggie stew, stirring every once in awhile

      Coconut and Tofu Curry:

      1/2 tsp fresh ginger
      5 cloves garlic
      1 onion
      2 stalks fresh lemon grass (optional)
      3 tbsp olive oil
      dash red pepper flakes
      1 block med tofu cut into 1 inch squares
      14 oz coconut milk
      1 1/2 tsp curry powder
      1 cup water

      Food Process (or use blender) ginger, garlic, onion, and lemon grass until smooth; adding olive oil if needed. In large skillet on med-high heat add garlic mixture. saute 1-3 min. add tofu and red pepper flakes stir gently cook additional 3-5 min. Season to taste. Reduce heat to med-low add coconut milk, water, and curry. stir to combine ingredients. Cover and simmer 20 min. Serve over rice.

      I LOVE CURRIES!!!! And this is one of my favorite recipes. It goes together quickly and it very adaptable to different ingredients.
      Coconut Curry Tofu

      2 bunches green onions
      1 (14 ounce) can coconut milk
      1/4 cup soy sauce, divided
      1/2 teaspoon brown sugar
      1 1/2 teaspoons curry powder
      1 teaspoon minced fresh ginger
      2 teaspoons chile paste (I used chile-garlic paste)
      1 pound firm tofu, cut into 3/4 inch cubes (I used baked)
      4 Roma tomatoes, chopped (or 1 can fire-roasted tomatoes)
      1 yellow bell pepper, thinly sliced (I used red pepper)
      4 ounces fresh mushrooms, chopped (I used portabellas)
      1/4 cup chopped fresh basil
      4 cups chopped bok choy (substitute red or green cabbage)
      Salt to taste

      Remove white parts of green onions, and finely chop. Chop greens into 2 inch pieces.
      In a large heavy skillet over medium heat, mix coconut milk, 3 tablespoons soy sauce, brown sugar, curry powder, ginger, and chile paste. Bring to a boil.
      Stir tofu, tomatoes, yellow pepper, mushrooms, and finely chopped green onions into the skillet. Cover, and cook 5 minutes, stirring occasionally. Mix in basil and bok choy. Season with salt and remaining soy sauce. Continue cooking 5 minutes, or until vegetables are tender but crisp. Garnish with remaining green onion.

    I've read a blog about Curry dishes, telling that there's nothing really special with it. But I believe it's in the way of cooking it, explore, research and a little more effort is effective. There are many recipes in the internet....try to look for some. Good luck! By the way check out friendseat.com for other ideas and more recipes.

    One of the easiest, quickest recipes that come to mind is Curried Apple Couscous From 101 cookbooks).

    4 tablespoons unsalted butter
    1 tablespoon curry powder
    1 medium apple, cored and chopped
    3 green onions, washed, trimmed, and thinly sliced
    1 cup whole wheat couscous (or regular)
    1 3/4 cup water
    1 teaspoon sea salt
    1/2 cup pine nuts, toasted
    Small handful of mint, chopped

    In a large saucepan over medium-high heat add 3 tablespoons of the butter, the curry powder, and a couple generous pinches of salt, and cook for a minute or until the spices are fragrant. Stir in the chopped apples and cook for about 3 minutes, enough time for the apples to soften up a bit and absorb some of the curry. Scoop the apples from the pan and set aside in a separate bowl.

    In the same pan, again over medium-high heat, add the remaining tablespoon of butter. Stir in the green onions, let them soften up a bit and then add the water and salt. Bring to a boil, stir in the couscous, cover and remove from heat. Steam for 5 to 10 minutes and then use a fork to fluff up the couscous. Stir in the apples, pine nuts, and chopped mint. Season with more salt and curry powder to taste.</original>

    I've modified this recipe a bit because I find it makes a GREAT side dish to something like a curried tempeh sandwich. To the above I add a whole mango and let it cook along with the apple in the curried butter (this works well with olive oil for vegan folk). Remove the fruit and follow the directions until mixing it all up. I then might add 1/2 cup of currants or dried cranberries.

      someone posted this on another thread a while back. i make it regularly but i am one of those people who doesn't measure anything and just go by taste, so experiment. you can add pretty much anything that strikes your fancy to this...carrots, tofu, whatever makes you happy. i can't eat ginger but some grated ginger would be a really nice addition.

      it's easy and yummy and it is so filling.

      huge bunch of spinach (it steams down to nothing so you really can't have too much)
      head of cauliflower, cut into bite sized pieces
      green lentils (picked through, rinsed)
      coconut milk (you can use light if you wish)
      garlic cloves (i LOVE garlic & i use a lot--you may want to start with a clove or two and go from there), diced
      big old onion, diced
      curry powder of your choice (they all have a different mix of ingredients)
      turmeric
      cumin powder or seeds or both
      black mustard seeds
      dried chili peppers if you want some kick, or cayenne will do as well
      fresh lime juice...start with half the lime and add if you need
      salt & pepper to your liking
      cilantro for garnish
      rice variant of your happiness

      put the rice in a cooker and let 'er rip

      put the lentils in a pot and cover with water plus a few inches. bring to a boil, reduce heat and cook until they are soft but not mush. i use a bamboo steamer to steam the cauli and spinach right on top of this. the spinach will cook really fast, the cauli will cook a little slower but also faster than the lentils will take, so keep an eye.

      in a separate pot, combine everything else together and bring to a boil. if you're so inclined, you can brown the onion and garlic first, adding a little olive oil and mix in the cumin seeds if you're doing this, then add the rest.

      once the lentils are done, rinse, combine the lentils, the spinach and the cauliflower into one pot. pour the coconut milk over this. serve the whole delicious thing over rice and garnish with cilantro.

        I don't measure either, or write down recipes ever, but . . .

        one time I made this delicious coconut curry couscous with mushrooms:

        chop and saute some mushrooms in a big pot just for a minute or two - add couscous and a little less water than you would normally use, mix, cook a little more than halfway through. add a can of coconut milk and enough curry so that you can taste it but it doesn't overpower the coconut flavor. cook through. ideally it will be just a little watery/creamy.

        this was yummy and we had plenty so the next morning we made little patties out of the mixture (i think we may have added egg) and fried 'em in a pan for breakfast.

        yum and a half.
