Vegan parmesan cheese

...do they make such a thing, and if so, do you know where I can get it? I have a dear (vegan) friend with a significant birthday coming and she wants eggplant parmesan. I've figured out how to make it, all but the parmesan part. I can find vegan cheeses of a few different varieties in the grocery, but not parmesan.

Any ideas?

    How strange that so many people who become Veggie try to emulate the things they gave up.

    I never understood all those "meat simulation" products. Tofurky Tofu sausages etc.

      I agree, Schodinger' Cat. Somewhat, anyway. I have been a vegetarian for more than 20 years and it has only been the last 10 years or so that I have tried "meat substitutes" and incorporated them into my diet. For me, it's laziness. Sometimes I need a protein feast and I just do not want to add up my amino acids. Meat substitutes are not a big part of my life, but I do eat some.

      I never understood the meat substitute thing either. Especially since some of the meat substitutes are less healthy for you than actual meat, because of the chemicals and processing used to make veggie product taste and simulate meat. From what I understand, tofurky is horrible for you.

        One exception though is veggie sausage. So much tastier than turkey sausage and healthier than pork sausage. It's soooo good. I have other meat eater friends who prefer it to the real thing.

      I don't think it strange at all. Some people feel they need to 'wean' themselves off of meat, and it may just do the trick.Some of my meat eating friends say the products are nothing like meat anyway! perhaps my veiw is the more variety out there the better :)

    vegan parmesan is a snap to make in a food processor. grind blanched almonds add nutritional yeast, light miso & a bit of sea salt. recipe from the uncheese cookbook.

      Awesome! I'll pass that along. It was for a dinner I prepared last weekend - used vegan mozz instead. Battered the slices with tempura and then melted the mozz on each one individually under the broiler, then poured on a chunky homemade garden marinara - it was fabulous. The tempura stayed crispy, and I had regular mozz for the non-vegans - it was great.
