I'm sort of obsessed with this hummus right now, so I thought I'd share!

Rosemary Artichoke Hummus

2 garlic cloves
3 to 4 tbls fresh rosemary, roughly chopped (I've used dried rosemary
too, about 5 pinches)
1 - 15oz can of garbanzo beans
1 - 15oz can of quartered artichoke hearts, drained. (I've also used
the marinated smaller cans to add more flavor)
Juice of one lemon
3 to 4 tbls EVOO
Salt to taste

Combine garlic and rosemary in the bowl of a food processor. Pulse to
chop 8 - 10 times. Add garbanzo, artichoke, and lemon juice and
process for about 30 seconds. Scrape the bowl and process again while
drizzling the EVOO through the top. Add more to make it soft and
smooth if you like. Add salt to taste at the end. I add a teaspoon.

    That sounds amazing.

My current favorite hummus I make has horseradish in it. Another favorite variant on this is beet pure with the horseradish and hummus.
