crock pot recipe ideas

does anyone have any good vegetarian or vegan recipes for slow cookers.

i already do spaghetti sauce, vege chili , and black beans in the slow cooker but i need other ideas.

    Congee

    1/4 cup millet
    3/4 cup short-grain brown rice
    1/4 - 1/2 tsp fennel seeds
    6 cups water
    Add everything to a crockpot and cook on low overnight.

    Melange

    Equal parts:
    Dried blueberries
    Almonds
    Raw pumpkin seeds
    Flax seeds

    Put in a container, cover with water, and allow to soak in the fridge overnight. Add to your congee in the morning

        I use my crock pot to make good veggie broth, that I then freeze.

        I keep a plastic container in the freezer and whenever I cook I throw all my peels and tops and skins in the bag. (Leave out all the nightshades, except potato skins, and avoid the cabbage/broccoli family, especially the red colored cabbage.)

        Once I get the bag filled with 2 or 3 big handfuls of frozen vegetable matter, I throw it in the crock pot with sufficient water to cover it by an inch or two before I go to bed. In the morning I have a nice broth that can be strained and turned into soup for that night's dinner...or can be frozen.

          Out of curiosity, what's the reasoning behind leaving out nightshades/broccoli/cabbage?

            the nightshades...peppers, eggplant...make it bitter.
            the broccoli and cabbage (the group name escapes me at the moment) make the broth taste sort of rubbery and unpleasant.

            All of these things can be added to soups...just not for the long cooking process of making broth.

                Cool. Thanks for the responses. I tend to leave these things in when i freeze my veggie parts. I guess that's why my broth has fallen short of my expectations!

                  I tend to leave out the broccoli until 20-30 minutes before serving. Any longer and I've found that it basically turns to green, flavorless mush - even on a 'low' temperature setting.

                  Anyone else have this problem?

                    Sure. I don't do crock pots but when I'm making a stove-top stew or saucy dish I only add brocco after taking the pot off the heat. It's pretty rare on the first day but it makes for non-mushy leftovers.

    Of course you can try other recipe ideas using crock pot, you can try appetizers like Apple Sausage with Onion and Mustard Sauce, or Cheese Artichoke Deep. You just have to be inventive, and try some research....it helps a lot. Or you can visit friendseat.com for more ideas.
