Does anyone know anything good to do with carrot tops?

    Okay. :>) I also vote for compost.

    But often I just wash them real good and eat them or toss them into where ever the rest of the carrots are headed.

    No back yard? Well, I'd get a bucket or trash barrel anyway and start comporting. Mix the food with some old dried leaves saved from the fall. Boston weather sucks to do that? No problem, just do it on the back porch or back hall. It will be a fun experiment.

    Alternatively, if you soak them on wet paper towels you may be able to get some roots going. And then start growing your own carrots. About 3 months ago, I did that with a horse radish ... quickly got a LOT of green shoots coming off a single horse radish top ... so I cut the top in lots of pieces, each with is own green budding leaf stuff .... then just soaked the pieces some more until they had roots showing ... and then potted them all in separate pots (2 and 3 liter cola bottles with the tops cut off, lol!) filled with dirt and potting soil ... and from the single horse radish, I now have about 8 horse radish plants thriving, in front of in a south facing window, in Boston. Next month, I'll plant them outside. :>)

      careful w/planting horseradish........I just listened on the radio and the gardener mad a point about how crazy wild horseradish spreads. i thinkyou need to plant them in really deep & narrow container.

        Thanks, I'll keep that in mind. Maybe I'll plant them along the link-fence, next to my neighbor's garden ... haha ... share the bounty.

        But if "wild horseradish" refers to a genomic type, then what I am growing is not a "wild" variety ... since they are grown from the top of a store-bought "parent" root. Currently they are contained by their 2- and 3-liter cola-bottle-homes, but I'll keep and eye on them come spring, after they get planted outside.

        I've munched on a few of the leaves, and they have quite a horseradishy kick .. I think i may like to harvest and eat the leaves as much as the root. Spreading like wild might be a good thing. :>)

      thanks for the link John.

      mmm, so now we have conflicting info. The earlier link posted by Chili claims that carrot greens are mildly poisonous and should be avoided...this link claims that they are highly hutritious and in fact medicinal...I know I often ate carrot greens and never got sick (although that is only anecdotal)

      so does anyone know for sure? are they nutritious and cure cancerous growths or are they dangerous? John's link states that they are antisecptic and mildly diuretic...so they may be mildly poisonous in large amounts...?

      does anyone actually know?

        I think medicine is personal and unique to each person.
        Rather than arguing good/bad, or really any extremes and polarity, perhaps the question is ~do I know my self well enough to notice if my ingestion of -x- feels healthy to me?

        I just wanted to add another facet of information to the general disco-ball of knowledge, not make anyone's decision for them....if you are curious about specifics of botanic toxicity, there is a myriad of Google linkage to woo you into the vast and continually self defining and refining world of plants.

    I am now starting to dip my toe into the sea that is Macrobiotics again. I used to be strict Macro for 4 years living in Los Angeles. About the only other city in the world that you could get away with eating that way AND keeping a demanding professional career is San Francisco, but you have to be a millionaire to live there anymore. Anyway, I digress...I remember there was a delicious recipe in one of Aveline Kushi's Macrobiotic cookbooks for carrot tops that involved simply blanching the tops in salted boiling water for 3 or 4 seconds, then immediately chilling them in cold water. I know that the sauce for it was made with tahini. There might have been another ingredient or two, but not many, since most Macro recipes are extremely simple. Macrobiotic folks try their darnedest to stay away from any foods that might be even slightly toxic, which for them includes most of the vegan staples, like tomatoes, potatoes, eggplant, and peppers, so I am pretty sure carrot tops are not toxic. This recipe was one of my favorites in my Macro days, and I ate it a lot. I have never been as healthy as I was when I ate Macro.

      Hello,

      Thanks for this post, this is the exact reason that I found this blog. I have read in the Marcobiotic books that eating carrot greens, and several other root greens is good for you. Although the book I have doesn't have any recipes, so I was looking for recipes using carrot greens or Diakon greens. I have both and wanted to use them. :-) I guess I'll have to look for the book you had.
