Any chance anyone knows how to make those amazing sweet potato pancakes?
They don't have to be vegan because they are not for me.
Please send me the recipe if anyone knows.
Thanks.

Spiced Sweet Potato Waffles(or pancakes). (not vegan)

You'll need a BIG bowl for this, two smaller bowls, a hand mixer, a wire wisk, a spatulaor paddle, measuring stuff, waffle irons,
    and a 1 C-ish ladle.

6 C unbleached all purpose white flour
    2 T baking powder
    1 t salt
    6 T granulated sugar
    1 t cinnamon
    1/2 t ground ginger.
    1/4 t ground allspice
    1/8 t ground cloves.
    1/4 tground nutmeg.

    4 C whole milk
    1 t vanilla extract
2 C mashed roasted sweet potato
    6 eggs
    1/2 C peanut oil

a little extra peanut oil for the irons.

    Preheat your waffle irons.
Sift together dry ingredients into a large bowl.

Separate egg yolks and whites into 2 separate smaller bowls.
With a hand mixer, whip eggwhites to firm peaks.

With a wire wisk, combine yolks with wet ingredients. Combine wet ingredients(except for egg whites) with dry until just blended.
Fold in egg whites with a spatula or wooden paddle.

Let this rest for 5 or 10 minutes then ladle into your greased waffle irons; about 3/4 C at a time.

Cook 'em 'til they stop steaming, or longer if you like 'em crispy.

Great with maple syrup, tempeh bacon, and eggs.

yummy. If I take out the allspice will it make it a little less spicey or ruin the taste?

you can leave the alspice out without any major change.

I made these yesterday, and they are great!!!!!!!!
We had them with a splash of homemade yogurt and some maple syrup.
I like waffles to have some substance to them, and these were perfect. I think this may be my new standard waffle recipe.
It was a great way to use up a bunch of raw milk that was just starting to sour.

I don't bother separating the eggs- we make waffles enough that I've experimented around and found no difference in the end result.
With this recipe, I might even double some of the spices next time to crank it up.

I wonder whether canned pumpkin would work in a hurry? Though baking the sweet potatoes was easy enough.

I'm glad you like them. canned pumkin, sweet potato, butternut squash will all work well.
yeah... the egg white thing may be more for the pancake side of things.

Glad I bookmarked this recipe- it's so much easier to share it when I can Copy/Paste it.

On the Allspice question: I like these much better without the allspice. It added a sharp astringent flavor that I didn't like.
When I made a batch this week, I went to sprinkle in a little extra nutmeg, and the cap came off! I scooped out most of the bottle's worth, but we ended up with extra extra nutmeg- and I loved them! They disappeared faster than ever.

I eat them with homemade yogurt and maple syrup.

My husband slathers them with Fox Hollow mustard and melts cheddar on top.
If you haven't had this mustard, check it out!! Dark brown and spicy/sweet, its main flavor is cloves.
But it also gives you that fumes-in-the-nose feeling if you eat a huge bite of it.

              Yum.
Oh, and we use a can of pumpkin. Wicked handy. :)
              Thanks again for this recipe!
