Pesto "pasta" with tomatoes

I eat a paleo diet, but LOVE to exchange recipes with the Vegan community because of all the wonderful vegetable dishes. I eat LOADS of veggies with added organic lean meats.
I have made this recipe a few times now and it's too good not to share. SO delicious and completely Vegetarian!! Can easily be made Vegan, too!!


1 Spaghetti Squash

1 1/4 Cups Fresh Whole Basil Leaves

1/4 Cup Walnuts

1/3 Cup Olive Oil

3 Cloves of Garlic, Minced

Salt and Pepper, to taste

1 TBSP Grass-Fed Butter (Vegans can sub Olive or Avocado Oil)

2 Cups Assorted Tomatoes

1/4 Cup Toasted Pine Nuts

Protein of your choice (Optional)

1) Preheat oven to 375

2) Cut the spaghetti squash in half, remove all seeds by scraping with a spoon. Place face-down in a large baking dish, and pour water until it comes halfway up the pan.

3) Bake for 30-40 minutes (you want it slightly undercooked) (NOTE: I recommend baking the squash if you have time because I think it tastes better. However, if you are pressed for time, go ahead and follow step #2 and place in the microwave instead for 5-7 minutes.)

4) In a food processor, combine 1 cup of the basil leaves, along with the walnuts (can also substitute 1/3 cup pine nuts), olive oil, 2 cloves of the garlic, and salt and pepper to taste. Process until smooth.

5) When the squash is done, use a fork to scrape the insides into a bowl. The squash will come out in small strands just like spaghetti.

6) Heat a large skillet over medium heat and add the butter. ( You can also use olive oil) Once hot, add the last clove of minced garlic.

7) Stir in the spaghetti squash along with the pesto. GENTLY fold in the tomatoes, fresh basil (remaining 1/4 cup), and the pine nuts.

8. Cook everything until well-incorporated and the squash is cooked to your preferred texture.

9) To make this a complete meal you can add grilled chicken or shrimp to the recipe. Or this is great on it's own as a side dish.

    Yummy! I'm doing the paleo diet with the addition of seeds and nuts too, but am also on zero carbs which means no squash. This recipe sure made me hungry tho. When i start adding carb veggies I'm going to make this for sure! Thank you so much =)

    This recipe is a keeper!
    With the walnuts and pine nuts, there is already some protein in this dish. I could also easily add a handful of sunflower seeds on top as a garnish (more protein).

      A person could use finely chopped sun dried tomatoes and add some additional oregino.

      Any could be squash baked or grilled and if grilled the ingredience of the mixutes brushed onto the squash.

      Zuccini can be substituded as well rather than the spagetti squash but the dish changes quite a bit .
