I went thru what was left of Missy's stuff when I was out in SLC for Steve and Kelly's wedding (which was fabulous). It was a gorgeous nite and Missy was all around in spirit (esp. b/c they had a bluegrass band.) Anyway, there was very little "hard" material. Most of her newer stuff must have been packed toward the top of her load and was thrown into the snow and ruined. So, if we are to put together a book, it will require some work on everyone's part to dig out recipies. I'd like to get it going by this fall if possible.

Missy's Cookie Bar recipe:
1 1/2 C whole wheat pastry flour
1 t. baking soda
2 eggs worth of egg replacer (see below for great egg replacer recipe)
2/3 C oil
2/3 C sugar
2 t. vanilla
1 C chopped nuts (pecans, almonds or walnuts)
1 C chocolate chips
Whish flour and baking soda together in a bowl.
Blend wet ingredients together with the sugar (including egg replacer)
Combine wet and dry, then stir in nuts and chips
Pour into a lightly oiled square pan.
Bake at 350 for 15-20 minutes, let cool, and cut into squares.
Egg Replacer:
Boil 1T whole flax seeds in 1C of water for 3-4 minutes. Strain seeds and save liquid. Allow to cool. Water will become think and goopy, like egg white. Use 1/4 cup of this liquid to replace each egg. OR use the powdered stuff from the store and mix with water per the package.

(again, I found these in my recipe book, they were on an email that Missy sent me like 2 weeks after we had met. These are in her words exactly.)
In a big mixing bowl, whisk together:
2 1/2 C unbleached flour
1C unrefined sugar (turbinado works best)
3/4 cocoa powder
1 t. salt
2t. baking soda
In the same bowl (mixing well by hand) add:
1C oil (canola or sunflower works best)
2t. vanilla
1-2C water (start with 1 and add more if too dry)
Batter should be thick but fluid, with few lumps.
At the end add:
1T vinegar (rice wine, white, or apple cider)
Pour into 2 (8-9") greased and floured cake pans.
Bake at 350 for 20-30 minutes (till toothpick comes out clean)
Cool and frost and YUM! (Missy's exact words!)
For frosting, I do either of these:
1/2C softened vegan margarine
A LOT (like 5 C maybe?) of powdered sugar
a little (1-2T) soy milk or silk creamer
(cocoa pwder-1C or so-for chocolate frosting)
Cream together with wooden spoon or use a hand mixer
OR
melt 2C chocolate chips with a little (1T) margarine and a little soy milk and use this for a frosting)
Flavors can be added to the batter and/or the frosting using:
extracts like almond, mint, orange, etc
grated lemon or orange peel
coconut
syrups that you put in coffee drinks (irish cream, hazelnut, etc)
Also, you can put jam in the center of the cake and then frost just the outside. -

I was unable to come up with any more of Missy's recipies so I guess a book is out...but this website is a great place to share these kinds of things. I am going to give these to a friend who is opening a vegan restaurant in St. Augustine FL with the proviso that she calls them Missy's cake and Missy's cookies.
