I'm getting a little bored of the routine salads, does anyone know of any healthy alternative recipe ideas? how about snacks? healthy dessert things?

Tue, April 29, 2008 - 6:36 PMi'm a calorie counter, but carb-conscious is always good too. i'm not trying to be TOO restrictive, but i tend to restrict myself a lot because i'm just not that knowledgeable about what i CAN eat... so i eat the same thing, or nothing...
but i JUST had some fabulous pretzel slims from trader joes (23 chips is the reccomended serving size also a good handful) and two tablespoons of trader joes fire roasted guacamole for a total of 150 calorie snack. very enjoyable indeed, and a nice little pep before class when my energy is low, and fairly filling too.
if you guys are into hummus, trader joes has the BEST jalapeneo cilantro hummus that goes well with a pita chip (or even pretzel slims, or maybe a veggie? i dono never tried it with veggies...) -

Low Carb.Tortilla = 50 Cal / 11g Carbs
2 Tbsp Trader Joe's - Fat Free Spicy Black Bean Dip = 30 Cal / 6g Carbs
2 Tbsp Trader Joe's - Tomato & Basil Hummus Dip = 35 Cal / 4g Carbs
2 Tbsp Trader Joe's - Bruschetta = 25 Cal / 3g
1/4 cup Trader Joe's - Lite Shredded 3 Cheese Blend = 40 Cal / 0.5g Carbs
No I don't work for Trader Joe's but I'm lucky to have one nearby and they do have a lot of stuff that doesn't have a lot of junk in it. you can, of course, substitute what you got.
I like to mix equal parts of Almond or Peanut Butter with Hummus (I like TJs Eggplant Hummus) to cut the fat and calories and put more on the tortilla. -

Tue, April 29, 2008 - 9:33 PMI made Chana Masala the other night for dinner. It lasted a few days and was quite yummy. Vegan too! I'll post the recipe I used if anyone's interested.
Tonight I made up some Matzo Ball soup and threw in some veggies and let them all cook together. There's enough left over to last through Thursday probably.
I'm all about the leftovers baby!
Of course...there's always the ever popular peanut butter on a spoon. mmm mmm....good times. -

You can use canned beans instead if you want. I just keep a bunch of dried beans in my place, so I used them.
Ok..
2 cups Garbonzo beens (also called Chick Peas). Soak overnight, and cook prior to using. Or used cans.
1 can diced/chopped tomatoes
1/2 med-large onion, chopped/sliced. Doesn't have to be perfect.
2 small yukon gold or yellow potatoes. Peel and chop
1 small chunk (about just less than an inch long) of ginger. Peel and slice/squish/mash up. I used the side of my knife and squished it.
Garlic...because Garlic is good. I used about 1Tbsp
2 tsp Garam Masala (it's a seasoning)
2 tsp cumin (I used more because I like it)
1.5 tsp tumeric (Haldi)
2 tsp salt
Olive Oil
water or vegetable broth
Ok...as I said, if you use dry beans, have them done first.
Get a nice pot. Put a bit of olive oil in it and heat it up a bit. Now, put in the onion, garlic and ginger. Let it cook for about five minutes or so, stir from time to time.
Now add the tomatoes, salt, cumin, garam masala and turmeric. Stir it well and mix it all in there. Add the potatoes. You will also want to add some water or vegetable broth. Don't use a lot, but just enough to cover the potatoes a bit. Let it cook for a while, about 20 minutes. You will need to stir it from time to time to get everything to mix well.
Ok, now you add the beans and a little bit more water/broth and stir. Mix it up and let it simmer for another five to ten minutes.
You're done!
I know it looks like a lot, but it really isn't. It didn't take that much effort to make. I know sometimes things like this might seem daunting, but when you are like me, and want something to munch on or just don't want to cook, you can have this as leftovers and it makes a great meal or side dish.
Some people eat it with rice. I just ate it plain and had oranges too. I think I might try making Puris next time, but they aren't really low fat. They are a type of fry bread.
In the Vegetarian/Vegan recipe tribe I posted a recipe for a Vegan Thai soup. I adapted it to be vegan. It's called Tom Kah Gai. Quite yummy.
Oh, the above recipe makes about four or so one cup servings (I think). I don't have the calories figured out for it, but I imagine it's not that much. Especially when its so filling.

Wed, April 30, 2008 - 5:38 AMWhen I get tired of salads or it's cold and rainy and I need something 'warm and cozy' I usually turn to stir-frys mmmmmmmmm
You can put virtually anything you like in them, and serve them with chinese noodles or rice, though I think rice is probably healthier especially if it is whole and not that cheap minute stuff. Also I use just a tad of extra virgin olive oil for the frying and for sauce all you have to do is mix 3 parts lemon juice, 3 parts low sodium soya sauce, 1 part corn starch and 1 part sugar (or I'm sure another sweetener would work, or you could leave it out altogether if you like) It's VERY tasty!
Also steamed veggies, of any variety, tossed with just a table spoon or two of a low fat vinaigrette salad dressing is AMAZING I personally use a herb and garlic one.......mmmmm
Nothing fancy but tasty! :)

1 whole fresh pineapple, peeled, cored, chopped
1 whole fresh pear, peeled cored, chopped
1 whole fresh mango, peeled, chopped
3 whole fresh kiwifruits, peeled, chopped
a bunch of fresh strawberries, stemmed, chopped
a bunch of fresh black grapes, quartered
Mix it all together, keep it in the fridge. Tastes fantastic. Great boost as a snack. To have more like a meal, eat it with yogurt or cottage cheese (for protein). It's something of every color. The pineapple tries to overtake the other flavors, but ends up being carrier for the other flavors instead.
Most veggies that are normally eaten in salads can also be eaten as snacks, without the salad. Carrot sticks, cabbage wedges, etc. The cool thing about cabbage is that it can also function as a "carrier" for other foods. Tuna salad on cabbage. Refried beans on cabbage. Cottage cheese on cabbage. If you cut small wedges, the outer leaves work like little "boats." If you're using larger pieces, you can use them more like "tacos" or rolls.
Use cabbage or lettuce as wraps instead of bread. Or wrap your salad in a lettuce leaf – trick yourself into thinking it's a sandwich.
Mix up and vary what you put in your salads, so they're not the same every time. "I had a tomato yesterday. I'll have an egg today." Experiment with different fruits in a regular lettuce salad. Top salads with nuts, sesame seeds to give a crunch. -

a really tasty sweet snack that I looooooove is:
3 or 4 table spoons of vanilla yogurt mixed with half an apple cut into tiny little pieces and a hand full of grapes. :) mmm yummy
If I want it even sweeter as like a special desert I add a few (just a few) small marshmallows, put it all in a little cup and plop one spoonful of fat free cool whip on it OR layer it with your favorite jello :)

Thu, May 1, 2008 - 5:43 AMThe book, YOU on a Diet, has some really excellent recipes. Almost everything is vegetarian or close to it (IE calls for turkey but you can put in boca crumbles) to cut further calories. There are also recipes on the website, but I don't have the URL just now-google it ;)
I've really enjoyed their chili, their soups, the brown rice pilaf, and they have some great alternatives to salad,
Also, if you search vegetarian dirty rice, some recipes come up-pick one and try it. YUM.
I don't know if you're veggie but i'm getting to where I am, so that's what i know (and it generally has less calories, i guess)
